Meal Plan for the week

Normally, our meal plans are created to be from Friday to Thursday because I buy our fresh produce on Fridays. Because the hubby will not be eating dinner at home until Tuesday, this weeks meals plan is small. Myself, I have been and will be eating salads for dinner because 1. I don't feel like cooking and 2. I could lose a few pounds. 

So here is what we will be eating Tuesday-Thursday. 3 simple meals. I don't plan for a particular day, just the amount of days. 


1. Brussel sprouts with peanut sauce and chicken(we still have some that need to be eaten before they go bad)
2. Shoarma again because it's easy and I bought fresh butter lettuce so I want to use it up
3. Stampot andijvie - one of my favourite Dutch meals. Mashed potatoes with endive and bacon. I'll make some slow cooked meat on the side, and will make a fresh gravy from it. I'm really excited for this one. I think I'll make it on Tuesday with a recipe. 

That's it for this short week of meals. I do have some back up ones to try out, probably in the weekend. 

-A yummy pasta recipe that the Hubby and I saw on a Jamie Oliver show (with broccoli and cauliflower) 
-Roasted beets with goats cheese, feta and lemon juice with some sort of protein and probably roasted potatoes 
-Roasted red cabbage with ground meat, garlic, onion, eggs, and zharkoe (a Russian dish with potatoes and meat. I'll add shredded carrot, chili peppers, garlic, and onion, as well).

I'll try to write up recipes for these meals if they are actually done. 

Later today, I'll make some beet pancakes, and some pumpkin pancakes for the munchkin. I'll also make up some sweet potato and bean nuggets for him for lunch. All of these things will be frozen so I can have easy meals for him during the week.
