Healthy pancakes recipe: kale pancakes

Healthy pancake recipe
Munchkin has a new breakfast and lunch favourite - spinach and kale pancakes. I initially made these healthy pancakes to be a baby/toddler food, but I have to admit - I love them, too and helped myself to several as I was frying them.

Healthy pancake recipe for kale pancakes


1/2 cup buckwheat flour
1.5 cups whole wheat flour
2 tablespoons chia seeds 
1 cup milk of choice (I used goats milk)
2.5 cups of spinach and kale combined
Oil of choice.  I used coconut oil
1 egg


1. Soak chia seeds in goats milk. I soaked them for about forty five minutes
2. Blend spinach and kale
3. Add flour, egg,  and milk
4. Add oil
5. Fry in non stick pan on low heat (prevents pancakes from browning and keeps them green)
6. Flip when edges are stiff and bubbles have formed

That's all!  They are so nice. I love the flavour that the goats milk adds. This is a savoury pancake, which makes them a great replacement for bread. I had some with cheese or with really love it with some hummus.  

The Munchkin loved them so much he decided they would be dinner. I cooked them during his afternoon nap (we're back to two naps a day), and left them to cool on the dining room table. After he woke up, he eventually realised there was food within reach on the dining room table and snagged some. 

I noticed (should have put the plate more in the center of the table), and helped him to one. I left the plate where it was because I expected he would want more. I was right... After playing for a few minutes, he ran back to the dining room, grabbed one in each handful, and walked calmly back to his toys, all the while maintaining his 'mommy-I've-done-something-naughty' facial expression. Adorable. He ended up eating about seven, and had an apple afterwards. I guess he had breakfast for dinner today. These are pretty healthy though, so I'm alright with it.
