Carrot cake lara bar adaptation

I love how these 'lara bars' are so sweet, but still so healthy. I serve it to the munchkin alone for breakfast sometimes, and other times with some plain, greek yogurt and chia seeds.

Here is the recipe I used for the carrot cake bars: 


1. 6 large carrots (shredded)
2. One apple (I removed the core and baked it. Then I simply put the sauce-y part of the apple into the batter for the bars) 
3. 3/4 of a cup of whole wheat flour
4. 10 dates
5. Half of a banana 
6. Half a teaspoon of ground ginger
7.1.5 teaspoons cinnamon
8. Half a teaspoon allspice 
9. Half of nutmeg
10. Half a teaspoon of cloves
11. One teaspoon baking powder
12. (If I remember correctly, I also added a tablespoon of chia seeds) 

This recipe can also be made with raisins and some nuts, which I omitted.


*Preheat oven to 200 degrees Celsius or 380 degrees Fahrenheit
1. Bake apple
2. Shred carrots
3. Place dates in food processor until they form a paste
4. Combine all wet ingredients
5. Combine dry ingredients seperately and mix them together
6. Add dry ingredients to wet
7. Place bars onto greased pan and bake for 30 minutes
8. Allow to cool

Pretty easy! I froze some, and they were still good afterwards, as well. Next time, I will make these with some raisins, and will freeze a larger batch.
