Easy healthy recipes: Beef barley soup

It's been cold here - no snow yet, but windy, rainy, and cold. For some reason, I don't make soup. I don't know what it is, but I always found it intimidating even though some of my favourite easy and healthy recipes are stews. 

Here in Holland, there are only one or two soups people tend to make from scratch. Usually, cooking involves a package of some sort of spices that comes in a box with instructions on it. 

Soups come in these packages, too, and usually involve adding water and maybe a vegetable or two. I really hate hate hate to cook like this, and it took me a long time to convince my husband that even though less convenient, cooking from scratch is not only healthier, but it's also tastier. It wasn't hard to convince him that the taste is better, but the convenience factor was a pretty big deal for him. 

Anyway, yesterday, I decided to get over my fear of soup. Because it was cold.

And it was delicious. So here ya go: 


Beef barley soup recipe

Ingredients: 

1/2 kilo (1 lbs) beef
2 medium carrots cut small
1 medium onion
3 cloves of garlic
1 cup of leeks
1 cup of barley
1 cup of celery
1/2 cup of celeriac 
1 tbs oregano
1 teaspoon parsley 
2 tbs paprika powder
2 tbs coriander (dried) 
1 teaspoon chives 
4 bay leaves

Optional: 
Jalapenos
Sriracha (we love the heat)

Instructions: 

1. Pan fry onion, garlic, pepper2. Add meat, salt, and pepper to taste 3. Once meat has browned, add leek 4. After about five minutes, add about one liter or about four and a half cups of water, and all of the spices 
5. Bring this to a boil and simmer for about two hours or until the meat is very soft and falls apart 
6. After meat is soft enough, I added the rest of my veggies and the barley.
7. Cook until barley is done

This was super tasty! And warmed us right up, which was much needed considering the typically Dutch weather (cold and wet) we've been getting. A bonus about this recipe is that it is also very adaptable - paleo? Omit the barley. Vegan? Omit the meat. There are so many veggies in this soup that it's a-okay to let them shine through!
