A healthy dessert! My son adores these and so do I!
I made these for the kiddo - so he could have a treat around the holidays, without the sugar and the unhealthy components. This is a really simple cookie.
Healthy peanut butter cookies:
I mixed equal parts almond butter (peanut butter, or any other nut butter will also work), and muesli, which ended up being about 1/4 of a cup. I added one tablespoon of stevia for a sweetener, and one teaspoon of coconut.
I mixed all of the ingredients, then molded these into a cookie shape.
These cookies need to be stored in the fridge or they will 'melt'.
The munchkin loooooved them. He helped me to make the mixture and ate some of the batter. I also like that this batter can be eaten raw.
Here are some other variations:
1. Add a banana (then you really wouldn't need to add stevia or honey)
2. Add some chocolate chips or cocoa powder
