Carrot cake lara bar adaptation

I love how these 'lara bars' are so sweet, but still so healthy. I serve it to the munchkin alone for breakfast sometimes, and other times with some plain, greek yogurt and chia seeds.

Sweet potato recipes



Munchkin and I looove sweet potatoes. I try to prepare them for lunch as often as possible. 


Sweet potatoes were one of the Toddler's first foods. He will still devour them as long as they are not boiled or steamed.

Panko breaded asparagus

I bought asparagus at the market on Friday, which I was very surprised to see. It was pretty cheap, too at only two euro for a bunch. I bought white asparagus, which is normally much more expensive at about four to five euro. My husband doesn't like it much, but I love it. Usually, I pan fry it with garlic, paprika, and lemon juice. Today, I thought I'd try something new based on a pinterest inspired recipe. I made panko breaded asparagus for the munchkin's lunch, but as I had suspected, it was a bit too crunchy for him. I however, found it absolutely delicious.

I love pancakes and crepes. I hate making them. It takes far too long, and I always find it a hassle to stand by the pan, waiting to flip them, and then waiting for them to cook. Whenever I make pancakes then, I always make a large batch so I can freeze them for easy breakfasts. We don't have a microwave, so whenever I want to have pancakes for breakfast (or feed them to the kiddo), I can just pop them into our mini oven and in five minutes, they are warm and tasty again.

Meals this week

I have big plans for cooking this week. I bought a bunch of sweet potatoes, and kale, and have two pumpkins at home. I have a lot of ideas of what to do with these things. So far, munchkin hasn't been cooperative with his napping, so I haven't had as much time to try out recipes, as I was hoping.

This weeks meal plan:

1. Quinoa chili
2. Steaks and salad
3. Beet bake with sausages
4. Left overs
5. Pasta (recipe posted)
6. Left over pasta with spare ribs
7. Whatever the hubby decides to make

Extras that I will be cooking:

3. Pumpkin corn bread
4. Sweet potato hash browns
5. Sweet potato cookies

Homemade (kale) pasta sauce

I bought a bunch of kale at the market on Friday. It's super healthy and I love it! My husband, however, doesn't like it. I wanted to incorporate kale into our meals this week, so I thought I would use the same technique that I do for munchkin's meals - I would hide the kale. I hid it in the pasta sauce, and the husband loved it! So the pasta sauce turned out really well, and I was very happy to be able to incorporate more kale.


I've also tried making kale chips before, but I burned them and haven't given it a go, since. I'll try again today. I also prepped some beans for chili yesterday, and will finish it off today. I think I will try to put kale in there again. Hopefully, both of my remaining kale endeavors will go well.
