Easy healthy recipes and healthy toddler meals: Creamy broccoli cauliflower soup! (vegan, paleo, skinny)
I love easy and healthy recipes like this broccoli soup. The best part - even though it still has a fantastic, creamy texture, the only ingredients are veggies, making this not only a clean eating recipe, but also great a vegan meal that is easily adaptable to be a fantastic paleo dinner. This soup is a regular in my kitchen - even my son will gladly gobble it up!  The Toddler could seriously eat this for breakfast, lunch, and dinner. Nom nom. 

Easy healthy recipes: Broccoli cauliflower soup 


Two yellow onions 
Half a head of garlic
1 broccoli 
1 cauliflower
2 small potatoes
Two tablespoons dried cilantro
One tablespoon dried oregano 
Water (one to two litres) 
Salt and pepper to taste


10. 1 small leek
11. One handful of fresh spinach, or several cubes of frozen spinach

This is what the soup looks like with about three cups of packed, fresh spinach leaves


1. Pan fry onion and garlic
2. Once those have browned, add leek 
3. Add the rest of the veggies 
4. After veggies have browned, add water, bullion, and spices
5. When veggies are soft, you can see how much liquid there is - if you want it thick, you can pour out some of the liquid. We like to have it so about half of the veggies are covered. Then we use an immersion blender to get the consistency we want. It's better to have less water, and then add it back later rather than the other way around. Simply drain some of it into a separate bowl. 

You  can serve this with cheese, spring onions, chives, and croutons. It would be delicious with some bacon, as well. We eat it with some green onions usually. The potato and cauliflower both add creaminess, which means there is no need for milk, extra cream, or flour. I love that this broccoli-cauliflower soup only contains veggies! You could eat your heart out and not feel guilty!
