Breakfast veggie patties

Can I just say - these weren't supposed to be patties. I wanted to make savory, breakfast bars that would be baked in the oven. I was planning on using more eggs, and no breadcrumbs. Or maybe it would have been something like an egg-y casserole. Mmm. But then my oven died. Broke. Dead. Now we need an oven. I seriously do not know how I can live without an oven. No lasagna, no cookies, no bread, no casseroles. Oh, all of those tasty things can no longer be prepared. This weekend, we are getting a replacement.

Breakfast veggie patties:

Time to prepare: 15-20 minutes
Makes: 8-10 medium sized patties

Ingredients:

1. One zucchini
2. One green onion
3. 1/4 cup squash
4. 1/4 cup peas
5. 1/4 cup frozen spinach (defrosted)
6. 1/2 of a tin of corn (normal size)
7. Three eggs
8. 1/4 cup bread crumbs
9. Salt and pepper to taste
10. Coconut oil

Instructions:

1. Grate zucchini
2. Grate squash into the same bowl (not too difficult. Cut a piece off, cut off the skin and grate it into the bowl with the zucchini)
3. Add the rest of the veggies
4. Salt and pepper to taste. You could also add smoked paprika, a little bit of cumin, some fresh coriander.
5. Add eggs and breadcrumbs
6. Heat pan on medium heat with a some coconut oil
7. Shape patties and pan fry until the edges become golden brown, much like pancakes. Cook with a lid
8. Flip
9. Cook a few minutes until the side on the bottom is also golden brown

Done! Nom nom nom!
