Easy healthy recipes: Egg and Vegetable Breakfast Bars

I whipped up some easy peasy breakfast bars for the Toddler and I enjoy the other day. The result was fantastic, and I want to share the recipe.

I'm almost ashamed to call this a recipe because they are just so easy! But who doesn't love an easy breakfast recipe that's also very healthy? I sure do!


This makes about ten breakfast bars


 25 minutes including baking time. 
10 minutes of prep time



  • 7 cubes of frozen spinach
  • 1/4 cup peas
  • 1/4 cup of shredded cabbage
  • 1/2 of a sweet potato (shredded)
  • 1/2 of a zucchini (shredded) 
  • 8 eggs or 10 egg whites
  • 1/4 teaspoon paprika powder
  • 1/2 tablespoon dried koriander 
  • 1/2 tablespoon dried chives
  • Salt and pepper to taste

Optional: 1/2 of an onion (shredded) and one chili, de-seeded and finely chopped.

  • Preheat oven to  200 degrees Celsius or 390 degrees Fahrenheit
  • Mix together all vegetables and spices 
  • Add the eggs or egg whites
  • Get out your baking tin/gear, and pour the mixture in 
  • Bake for fifteen minutes or until the middle has cooked
