Meal Plan Monday

It's Monday already! It means it's time for another Weekly Meal Plan Link Up, hosted by Laura at I'm an organizing junkie.

This week has to be healthy. As in super healthy to make up for this horrible weekend of eats that we had as part of our 'anniversary weekend so it's ok to eat stuff yourself with unhealthy foods' celebration. Yep. That happened. Three days of unhealthy eating and I only slightly feel bad about it. The slightly is because I wasn't able to get in my workouts. I like a good cheat meal every now and again, but it was too much in combination with the lack of exercise! This means that we are going to get back to our healthy meal plan this week and forget about takeaway: 


Weekly Meal Plan 24/02 



Breakfast

  • Oven baked oats
  • Hard boiled eggs
  • Oven baked breakfast bars (loaded with vegetables) 
Egg and veggie breakfast bars

  • Smoothies 

Lunch

  • Left overs 
  • Lentil soup 
  • Chickpea salad
  • Brussel sprouts and greens salad 
  • Homemade pizza (if we have time in the weekend)

Dinner

  • I still haven't made wraps! This week, I am making Mexican-y wraps. It's happening. I'm excited. 
  • Chicken stew 
  • Left overs
  • Tacos
  • Unstuffed cabbage
  • Pasta with homemade sauce 
  • Left overs

Desserts


  • Black bean brownies 
  • Zesty chickpea bars 
  • Apple pie cookies

Bonus

I've been working on some Saint Patty's day recipes! I'm excited to get started on testing them out this week because it's already almost March! I have several healthy ideas for green shakes, Saint Patrick's Day pancakes, Saint Patty's Day cookies, and more! 

That's all for this week's meal plan. Hopefully we will be able to get back on track, and I need to get back into a good fitness routine. I was starting to feel good again! I mean, loads of energy and things were getting done, but this weekend, I could definitely tell how what I eat impacts how I feel - not about my appearance, but physically. I was sluggish and didn't want to do anything after two days. It was okay - we got to relax as a family, but it was enough to last me a while. 

I'm hoping to make most of our dinners in large portions so I can freeze leftovers for lazy days. It's important in our house because as much as I love to cook, there are just times when we get busy, don't feel like it, or have a specific craving. If I freeze some healthy options, we certainly won't have 'I don't feel like cooking' as an excuse for getting takeout.
