Munchkin meals

Another month has gone by already! It's still pretty cold around here, even though we've only had snow once and it didn't stick. The wind is always going wild in the Netherlands, and I swear, it rains horizontally and vertically around here. This weather always makes me want comfort foods and soup, lots of soup. So, that's what we've been eating. Here's a look at this month's munchkin's meals --

Here are the kiddo's eats lately at seventeen months (click on the photos for recipes): 

Breakfasts: 

1. Eggs, eggs, eggs - hard boiled eggs, egg 'muffins', and 







Egg scramble with veggies 

2. Oatmeal 




Berry-licious oatmeal bars



Carrot cake oatmeal cookies  - I love these. A seriously tasty, and fairly guilt free cookie. 

We also eat regular oatmeal with fruit and chia seeds frequently. 


3. Toast with almond butter and a fruit salad

4. Greek yogurt with muesli, fruit, and chia seeds 

5. And these new additions to our breakfasts:

Lunch/dinner: 


1. Soups 



Homemade broccoli cauliflower soup (skinny version!)  

I don't have a photo of the munchkin's portion, but he loves this soup!  


Black bean and squash soup 

2. Carrot-zucchini latkes




3. Unstuffed cabbage with buckwheat




It doesn't look all that great, but we all loved it! The kiddo devoured his entire portion above, along with half of mine. He didn't want the squash though.

5. Burritos with leftover chili 

Dinners tend to be whatever we are eating. Lunches are usually leftovers or something easy that I can whip up. 

Munchkin's snacks are very simple: fruit, raisins, and yogurt. He also still nurses, and drinks tea or water with meals. The teas he drinks are caffeine free.
