What I Ate Wednesday - lentils, soup, and more!

What I Ate Wednesday (including toddler meals)

Seriously. It's ridiculous, I need coffee, but I'm drinking decaf because Munchkin is still nursing. 


Scrambled eggs

Can you even tell that there are eggs in there? I think I should work on making the ratio a bit more even between veggies and eggs, but the kiddo and I do like it this way...

Yup! He ate all of it! This kiddo is still loving on his veggies! I am so happy about this and will continue to encourage it as long as possible! 


Easy, but delicious lunch! We had a warm lentil salad with beets, mushrooms, and leeks.

I'm really excited about this because I finally found a way to prepare lentils that I like. I've been searching for a while, but the results have been mediocre. I actually got the inspiration from Candid Mommy's beet and leek soup.

But I decided against a soup because I had planned on making a soup for dinner:


For dinner I made Snert, a split pea soup that is loaded with a ton of vegetables and meat! This is also a delicious vegan meal if you skip out on the meat. The list of veggies is: onions, leeks, carrots, celeriac, celery, potatoes, and a whole lot of them! 

Okay, it looks like a blob of veggies, but the flavours are all there and it's scrumptious as well as very healthy! 

Bonus: my toddler loves it so this recipe is definitely a keeper! 


Fruit, fruit, fruit! We love fruit around here! The kiddo and I both had a banana, shared a few apples, and some grapefruit. 

We also snack on sunflower seeds, raisins, and occasionally yogurt (Greek yogurt). 


Always the same for the kiddo and I - lots o water! We love water. And tea because it is still so chilly with the ridiculous amounts of wind we get here in Holland. I buy loose leaf tea at the market we go to each week. Munchkin and I have been loving a Rooibos mix and lemon grass tea - both are caffeine free.
