Healthy pizza recipe
Hubs and I have been really into pizza the past few weeks. We're making a concerted effort to stop spending and takeout is definitely an easy way to do that. However, we still want to satisfy our cravings from some delicious pizza, with a tomato sauce and some fantastic toppings. What better way to do that then with a healthy pizza recipe? How about a crust filled with spinach for some extra oompth?

Now that is tasty, and honestly, I prefer homemade to the takeout alternative. Hubs and I love thin crust pizzas, and those from a shop tend to be covered in grease (ick), which aside from being unhealthy, also makes the crust a bit soggy. We love a bit of crunch from the crust.

Servings

Depends on how big you want your pizzas, but this recipe makes a whole lot. I made 11 mini pizzas and froze about half of my dough. 

Crust Ingredients

  • 5 cups packed, fresh baby spinach leaves
  • About half a cup of warm water 
  • 1 package of dry, active yeast
  • 2.5 to 3 cups whole wheat flour
  • 1 teaspoon salt
  • 1 tablespoon extra virgin olive oil
  • Handful fresh chives (one tablespoon dried)
  • Half a sprig of fresh rosemary (1/4 teaspoon dried)
Side note: I love the fresh herbs in the crust. It seriously adds so much flavour in such a simple way. If you don't have fresh, just add some dried herbs. They both add so much fantastic flavour - just dooooo it! 

Crust Instructions

  • Puree spinach along with chives and rosemary - I added two tablespoons of low fat milk at this point because my very old mixer had a hard time with just the spinach
  • Measure how much of the spinach mixture you end with. I had about 1/2 a cup
  • Add enough warm water to the spinach mixture to get one full cup
  • In a mixing bowl, add salt, yeast, and half of the flour
  • Mix
  • Add the spinach-water and oil
  • Stir or use an electric mixer 
  • Stir in as much of your flour as you can gradually while mixing on low speed 
  • Once you get the flour incorporated, mix for about three minutes on a higher speed*
  • Cover and let sit for ten minutes if you want a thin crust. For a thicker crust, cover and let rise for about forty to fifty minutes. 
  • Preheat oven to 200 degrees Celsius or 400 degrees Fahrenheit
  • After the dough has risen, roll out your pizzas, puncture a few holes in the bottom of the crust with a fork

  • Last step - pop them in the oven for ten minutes without any toppings
*I can't tell you exactly how much flour to add - you want an elastic and smooth dough, and the quantity of flour depends on your sea level

While the crust is gettings its pre-cooking done, we'll make the sauce and prep our toppings: 

Sauce Ingredients

  • 1 tin tomato paste
  • 1 tin chopped tomatoes
  • 2 sprigs of fresh thyme (1 teaspoon dried)
  • 1 sprig of fresh oregano (1/2 teaspoon dried)

Sauce Instructions

  • Mix all of your ingredients together
  • Get your pizzas out of the oven, put on your sauce, and then add your favourite toppings and pop in the oven for another five to ten minutes! 
The sauce is pretty complicated, eh? Making the pizza dough is actually pretty easy, but I don't do it very often because I don't like the clean up. Today, I had a little helper so it was pretty fun (and educational!)

The Toddler did a great job helping to pour the ingredients into our bowl, and helped me mix them together. Later, he helped to roll out the dough!

Because I don't like to make homemade pizzas often, I like to freeze the extra dough! It takes away half of the work, and then, all I have to do is defrost the dough, roll it out, and make some easy peasy sauce. I love  having pizza for lunch, and how versatile pizzas are so I am excited to get these out again.
