Easy healthy recipes: Ginger sweet potato hash
Let's talk breakfast. How about easy, healthy breakfast recipes? How about this ginger sweet potato hash.



Get ready folks - I'm sharing two versions of this recipe today! A vegan/vegetarian one and a paleo version. Both are pretty spectacular. Just sayin'. 


For both recipes, the cooking time is between 18-25 minutes, and they make about 1.5 portions (enough for one adult and a toddler).

Easy healthy recipes: Ginger sweet potato hash

Ingredients 

  • 1 small onion
  • 1.5 cups shredded or very thinly sliced cabbage
  • 1/2 a sweet potato cut into very small pieces (or cooking time will be too long)
  • A thumb sized piece of ginger
  • 1 clove garlic
  • 1/4 tsp smoked paprika powder, cumin, and turmeric
  • Four thinly sliced stalks/pieces of fresh chives 
  • Four thinly sliced leaves of fresh sage 
  • Salt and pepper to taste
  • 2 tbs water
  • Coconut oil (or oil of choice) for pan frying
  • Optional: add a handful of chickpeas 

Instructions

  • Heat skillet with oil on medium heat, add onion
  • Once the onion is translucent, add sweet potato 
  • Pan fry sweet potato for about ten minutes. The sweet potatoes should be getting soft already
  • Add the cabbage, ginger, garlic and spices and pan fry for another ten minutes 
  • I got impatient at this point, added water, and cranked up the heat for another three minutes! This finished off the cooking on the sweet potatoes. 
  • Once the sweet potatoes and cabbage are soft enough for your liking, turn off the heat, plate up, and add your fresh herbs!

Ingredients


  • 2-3 tablespoons of bacon
  • 1.5 cups shredded or very thinly sliced cabbage
  • 1/2 a sweet potato cut into very small pieces (or cooking time will be too long)
  • A thumb sized piece of ginger
  • 1 clove garlic
  • 1/4 tsp smoked paprika powder, cumin, and turmeric
  • Four thinly sliced stalks/pieces of fresh chives 
  • Four thinly sliced leaves of fresh sage 
  • Salt and pepper to taste
  • 2 tbs water
  • 1 egg

Instructions

  • Heat skillet with bacon on medium heat
  • Once the bacon has gained a bit of color, add onion
  • Once the onion is translucent, add sweet potato 
  • Pan fry sweet potato for about ten minutes 
  • Add the cabbage, ginger, garlic and spices and pan fry for about another ten minutes 
  • [In the meanwhile, pan fry an egg in a separate pot]
  • Add water to the veggies, turn up the heat a bit and cook for three minutes if sweet potatoes still aren't cook. Repeat if needed. 
  • Once the sweet potatoes and cabbage are soft enough for your liking, turn off the heat, plate up, and add your fresh herbs!
