Healthy stew inspired by the cold, Dutch weather

Let's talk stew. How about a healthy chicken recipe that comes in a little personal pot after cooking away in the oven? Mhm, mhm! It's the perfect thing to warm up with after a cold, windy day of rain clouds and thunderstorms.

It's good, really good. It's loaded with vegetables, spices and herbs, giving it a ton flavor. The Toddler loved it, and that's all of the evidence I need to know that a recipe is a keeper. This recipe is definitely going to be making more appearances in my kitchen, especially on cold and cloudy days. Maybe in between hailstorms? 

Something else that I love about dishes like these - the ones where you 'dump and go' - they are so adaptable to any diet! Vegan or vegetarian? Leave out the meat and add some beans or more veggies! Is it paleo? Is it vegan? You can really do whatever you want to it, and it will still be good. 

Healthy (Paleo) Chicken Stew Recipe

Servings: 4 

This recipe makes enough for my husband to have seconds, for me to have one bowl (very filling!), and for the toddler to have a bowl.

Time: 1.5 hours

  • 1 tin of tomatoes (or you can roast your own by cutting about 8-10 roma tomatoes in half, laying on an oven safe pan, drizzling with a little oil of choice (coconut for me!), salt, and pepper. Then roast on 200C or 395F for 2 hours)
  • 3 chicken breasts (or 1 cup cooked black beans)
  • 2 carrots
  • 4 cloves of garlic
  • 2 yellow onions
  • 4 very large mushrooms
  • 1 yellow bell pepper
  • 5 cups of water
  • 1 tablespoon of smoked paprika powder
  • 1 teaspoon of turmeric
  • 1 tablespoon of dried coriander
  • 1 tablespoon oregano
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 5 cups water
  • Drizzle of oil of choice (again, we use coconut) 
  • Optional: 1/2 cup of chopped butternut squash

  • Pan fry onion in a pot large enough to hold all of the ingredients
  • Add chicken (cut into small pieces)
  • Once the chicken has browned, add the vegetables except for the tomatoes and spices
  • After about 7-10 minutes, add the water and the tomatoes
  • Bring to a boil then simmer for another ten minutes 
  • Pour into small oven safe dish of choice and transfer into preheated oven 
  • Let them cook in the oven on 200 C or 395 F for about an hour to an hour and a half. You want the vegetables and meat to be very soft and tender.
The steps are pretty simple, but it does take a while in the oven. To save time, you could prep the meal ahead of time and/or freeze it. I have yet to encounter a stew that doesn't freeze well!
