Paleo-rific eats throughout the course of the day

To say that life has been hectic lately is a bit of an understatement. I had three, yes folks, three cups of coffee yesterday. Granted, all except the first were decaf, but still. Three gigantic mugs filled with way too strong coffee.

My head has been spinning at a million miles an hour (or kilometers for those of us living in not the US) with all of the packing and arranging that needs to be done. I keep reminding myself that a bigger house with lots of land is worth it - we can actually have space for more babies, and I can perhaps give gardening a shot! 

In the meantime, I will be enjoying a million cups of super strong coffee and will take this experience as a test of my patience, how calm I can remain while facing stress, and a test of the strength of my marriage because we will barely seeing each other during construction time. Fun, huh? It's worth it, but it will definitely be a challenge!

Actually, speaking of more babies. I am insanely obsessed with TTCing number two at the moment. Like ovaries are full on raging and yelling at me to get a baby brewing. Not good. Not good at all as the timing couldn't be worse and we have yet again put off conceiving number two because of the new house. Once it's done, we're hoping that the timing will be better. I have to admit, that decision was really, really difficult to make. I know we are young, I know there is time, I know that we are putting it off for a fantastic reason, but it's hard.

Welcome to Mommyhood: wooden spoons


I'm a little bit obsessed with that teal-ish colour and ran into these super cheap wooden spoons. I'm not sure if we'll be using them or if I may put them up somewhere for decoration or DIY something with them. No idea, but they will serve as inspiration for the kitchen. 

In spite of all of the craziness that has become my life, I am really looking forward to decorating the new house! I am trying to make the most of this situation and think about the lovely new colors that we will be adding and how much more Toddler friendly the new home will be! 

Okay, okay, let's move on to the reason why we're here... the food! 

Breakfast



Coffee and two hard boiled eggs. Boring.

Like I said before, three huge cups of coffee. Absolutely ridiculous. 

Later in the morning, I made a spinach smoothie. I actually realised on our road trip that if I don't start the day with a green smoothie - my life feels off. The Toddler has been drinking them with me most days. Sometimes he's not into them, sometimes he asks for more. 


Lunch

I first cook about 8 beets (steamed, slow cooker, boiled but I prefer not roasting for this recipe). Then, pan fry some bacon (optional), and add one onion and half a leek. Add beets, and salt and pepper, lots of pepper! It's so easy that I can't really call it a recipe, but it's really, very good. 

Just like every recipe that I make ever this one is adaptable to be whatever lifestyle. If you don't eat meat, simply leave it out. I can't remember trying this particular recipe with black beans, but it seems like they would work, or chickpeas. 

Dinner

Super easy unstuffed cabbage because I couldn't be bothered to actually stuff it.

It's really the same ingredients that I would use in stuffed cabbage except all mixed up together and I made it paleo. Really good. It's another adaptation of a Russian recipe I grew up eating. 

The food like of makes it more tolerable that I really miss Ukraine, and that we probably won't be visiting for a few more years because of that ... oh almost war like situation that is currently happening in the part of Ukraine that I'm from. Not cool. 

I also just realised, I completely ignored my meal plan yesterday. Ooops.

Snack

Favourite snack at the moment - apple, peanut butter, chia seeds, and an omega seed mix.

Toddler loves it, too. A lot. He actually takes the apple with a fork, dips it in peanut butter, and licks it off. After the peanut butter is gone, he eats the apple. Whatever. He eats it still. 

The bad stuff 



Not even going to kid myself, I had some of that store bought chocolate bread/cake-y thing and it wasn't even that good. Not worth it. The wine? Yea, that was pretty awesome. I had two glasses, which resulted in Hubby and I falling asleep on the couch at nine last night.
