Unstuffed Cabbage: A healthy and paleo recipe
Today, I want to share a simple recipe for unstuffed cabbage. This week has been crazy, and I'm trying really, really hard to make sure that we are still eating healthy and sticking to our paleo meals. I completely abandoned my meal plan though for whatever felt easy and whatever I felt like eating. So, without risking a very long into, let's get to the food:

Time: 


Prep time - 5 minutes for chopping veggies 
Cooking time - 25 minutes (but you don't need to be 'doing something' for the whole time. It's a really easy-throw-in-the-pot type of dish) 


Servings: 


4-5 depending on how big your portions are 


Ingredients 

  • 1/4 kilo ground turkey meat (1/2 lbs) (Or you can replace with 2/3 cup of cooked chickpeas)
  • 2/3 of a medium head of cabbage
  • 2 onions
  • 2 shredded carrots (notice how I didn't do that. I started chopping and realised... oops. It doesn't matter too much, but it will increase cooking time.) 
  • 4 cloves of garlic
  • 1 tin of tomatoes (or make your own roasted tomatoes) 
  • 2 tablespoons of tomato paste
  • 2 cups of water 
  • 1 tablespoon turmeric
  • 1 tablespoon smoked paprika powder
  • 1 tablespoon thyme
  • 1 tablespoon sage
  • 1 tablespoon coriander
  • 2/3 tablespoon fresh ginger that I grated 
  • Salt and pepper to taste
  • Coconut oil for pan frying

Instructions

  • Pan fry onion in coconut oil (or other oil of choice)
  • Add meat (or chickpeas) 
  • Once the meat has browned, add the rest of the ingredients (just make sure to shred the carrots) 
  • Bring to boil then simmer for about fifteen to twenty minutes or until the vegetables are soft enough for your personal preferences

And now we're done! It's so easy - perfect for a busy day of packing. I love when I can simply throw together a bunch of ingredients in a pot and have it come together as a delicious (and healthy!) meal to feed my family.

We usually eat stuffed or unstuffed cabbage like this with some brown rice or buckwheat on the side. Because we switched to paleo, I opted out of the brown rice this time. I did contemplate adding cauliflower rice, and highly recommend you try it, but I was rushing to get back to packing, so no side dish for us.
