Easy, peasy: Egg bake

Easy healthy recipes: kale and egg bake
Have you noticed a trend around here this week? We've been lovin' on easy (but healthy!) recipes. I've been cooking up a storm, but since my adventures in baking last week, I'm just not in the mood for spending hours in the kitchen. Or maybe it's because we're finally somewhat settled, for now that is. I just adore, easy, convenient recipes. A lot. See, here's another:

Psst! Here's a not so secret, secret - my family adores eggs! A lot. A dozen eggs seriously does not last in my house for more than a day or two. Recipes like this are most definitely the reason why. I mean, kale + eggs + oven = awesome! 


  • 4 eggs
  • 5 small button mushrooms  
  • 1 green onion 
  • 1/3 cup kale
  • 1/3 teaspoon smoked paprika
  • 1/4 fresh grated zucchini 
  • Juice of 1/3 of a lemon 
  • 1/3 cup coconut milk or water (yes, water works very well, too!)
  • Salt and pepper to taste
  • Optional: a sprinkle of chili flakes


  • Preheat oven to 200 degrees Celsius or 395 degrees Fahrenheit 
  • Chop veggies 
  • Mix all of the ingredients together 
  • Pour mixture into a baking dish (I used a 9 x 9 baking dish, which resulted in a fairly thin dish. You can double this recipe or use a smaller baking pan for a thicker result) 
  • Bake for 15-20 minutes 
  • Enjoy!

I adore quick breakfasts! We've been sticking with our typical smoothie and hard boiled eggs routine for weeks now simply for that reason - I'm far too lazy in the mornings to actually make something that involves more than five minutes of work. That's five minutes from washing vegetables or fruit to actually serving.

This dish was not only a welcome break from our typical routine, but it also managed to fall into that five minutes of work category. Granted, it did have to cook for a little while longer, but I was able to enjoy that cooking time while sipping my super strong, black coffee! 

At the same time, in spite of being a 'convenience meal' and in spite of being so simple, this recipe was very flavorful and healthy and paleo! You know how I know it was good? The Toddler ate most it. I got him to eat kale! I mean, actually eat it, including swallowing it, and not spit it out and then wiping down his tongue with a napkin. Ya know, to get that icky, leafy greens taste out of his mouth! Instead, he gobbled it down, and asked for two extra helpings! 

Anyhow, if you are looking for an easy breakfast, this is definitely a great choice!
