Happy Meal Plan Day!

Paleo Meal Plan
Happy Mother's Day everyone! My sidekick gave me a beautiful homemade card and even drew a picture! It'll be framed and hung up in our bedroom, if we ever get into our new house. Theoretically, we should be getting our key in less than two weeks, but that's already three weeks after when we were supposed to have it. So. Frustrating. As much as I am not looking forward to construction, I'd love to actually get going on it and get it over with. 


As far as food goes, this week, I'm continuing on with paleo. I'm so glad that we have finally managed to really stick with our routine again. Even though I would say we still aren't back to 100% paleo meals, but rather about 70 to 80. I'm very happy with that, and find that we are all feeling better again. Eating only sandwiches for breakfast and lunch just doesn't provide us with enough energy to get through the day, especially for Hubby who has a pretty demanding job. I'm hoping to focus on providing him with more nutritional and filling meals for work lunches soon. 

Here's what's on the menu for this week's paleo meal plan: 

Breakfast

  • Sweet potato and carrot hash with egg 
  • Smoothies 
  • Hard boiled eggs or egg muffins or another egg bake

  • Health-ified carrot cake oatmeal bake (recipe coming soon!) 

Lunch

  • Black bean and squash burgers 
  • Salads 
  • Salad olivier (recipe coming soon because it's awesome and we're a bit obsessed at the moment) 
  • Loaded sweet potatoes 
  • Sweet potato and carrot soup (the Toddler is in love with orange veggies and it's been super rainy, so orange soup = awesome!) 
  • Leftovers

Dinner

  • Quinoa salad with some oven roasted veggies and a side of pan fried fish or meat of some kind
  • Chicken borsch/beet soup

  • Goulash 
  • Stir fry with bak choy, cabbage, carrots over cauliflower rice. We use a homemade spice mix for it.

  • Rosemary potatoes, some pan fried broccoli with a garlic-lemon sauce, and some slow cooked beef 
  • Leftovers


Toddler food noms 

Still didn't get all that baking done from last week, so I'll be trying again this week. I'll try to keep a few paleo and a few not paleo, but we'll see how well  I'll do. Either way, I would much rather he eat homemade baked goods and breads than store bought as I can control the amount of salt and other 'crap' that goes into them. Plus, if I make them myself, I can hide some extra spinach or fruits and vegetables in there. 

  • Squash and sweet corn muffins 
  • Beet muffins 
  • Kale and carrot muffins 
  • Spinach and rosemary bread

Phew! I hope we get to all of these as I am quite looking forward to eating them!
