23 Healthy Toddler Meals (but really, it's what I've been eating, too)

I love is looking at what other people are feeding their kids. I don't mean that in a creepy way, but my husband and I are really conscious about what we feed our son, and we are constantly on the lookout for new ideas to try out in the kitchen, not just for the Toddler, but for ourselves. 

When it comes to feeding our son, we make sure that he is getting a variety of healthy fruits and vegetables with each meal, along with a good ole serving of protein, which may or may not be a meat product. We usually follow a particular pattern for a few weeks at a time. This depends on what is available at the market or what is growing in the garden. This week, he got loads of eggs, bananas, carrots and broccoli. 

In order to make sure that the Toddler consistently gets healthy meals, I make sure to whip up a few basic meals during the beginning of the week. I make homemade frozen vegetable mixes based on whatever we have that week. I like to freeze them in Toddler sized portions so that I can simply steam them about five minutes before it's time to eat.

Breakfasts


Orange and peach salad with a hard boiled egg and a piece of toast

We ran out of our natural peanut butter that I normally put on the Toddler's toast. Instead, he got to eat it with nothing because he loves plain ole bread. 


Banana and peanut butter tortilla with a hard boiled egg and a mandarin

... and we got more peanut butter. 


Half a banana with raisins, chia seeds, and full fat Greek yogurt

Normally, this is followed by the rest of the banana and perhaps a mandarin

Oatmeal with half a banana and almond milk

Meals like this are always served with whatever fruit we have on hand. This week, it's been cherries or a peach. 

Sweet potato and kale hash

This isn't his actual portion, I forgot that photo! Whoops! But, he did like it... rather he liked everything but the kale. 

Lunches and dinners


Even though we don't always (or usually) provide vegetables at breakfast time, we put in quite an effort to make sure that both lunches and dinners include a large portion of veggies and a protein of some sort. Vegetables tend to be the largest part of his meals for us and we like to give the Toddler loads of them. Luckily, they are also usually what the Toddler will go for first!

Lentils, fish, roasted veggies, and a few fava beans

Couscous (usually quinoa) with corn and green beans, slow cooked pork chops, and some stir fried/curried veggies

Noodles, steamed broccoli and carrots, and lemon garlic chicken

Lentils, kidney beans, snow peas, and steamed carrots and sweet potato

Snacks

This was good! Really, really good! My son ate it by the spoonful, and afterwards, proceeded to eat the veggies. The cracker was completely ignored. 

Cucumbers and mini sweet peppers

The peppers were rejected. The cucumbers were devoured.
