Healthy [& Paleo] Potato Salad

Challenge accepted! It's day 1 of the the three week long paleo challenge that I mentioned in yesterday's Meal Plan post! I'm so excited about it, and after attending a [Dutch] birthday party yesterday, which means, there were loads of deep fried snacks and cake, I really need it.

To make sure that I stick with my goals during the week, I'm going to be doing a lot of meal planning. I'll be updating you lovely folks every Sunday and Wednesday with how it goes (Meal plan and What I Ate Wednesday posts). Because my husband is also participating, I think I'll do a post about what I pack him for work sometime along the way, as well. 

Moving on to today's topic: with the 4th of July coming up really, really soon, I thought I'd share a simple potato salad recipe! This was actually something I ate a lot as a child, straight from my grandma's cookbook.

I have no idea why, but I never remember this. I made a huge bowl. Like ridiculously huge. Enough for four adults to eat from for three days (it's a side dish). 

Kitchen tools

  • Knife
  • Cutting board
  • Pot

  • 4 carrots 
  • 2 medium potatoes 
  • 4 eggs 
  • 1 cup pickles (chopped in small pieces)
  • 1 cup of ham slices 
  • 1 cup peas
  • 2 green onions
  • Salt and pepper to taste
  • A handful of fresh dill (1/4 cup or so)
  • A cup of mayonnaise or a 1/2 cup of extra virgin olive oil (I prefer mine with a drizzle of extra virgin olive oil on my plate and don't add any dressing to the main bowl 'cuz that's healthier and easier for everyone to choose their own dressing.) Or you can make your own paleo mayo, but that has raw egg yolk in it.

  • Steam or boil carrots and potatoes 
  • Cook eggs 
  • Chop up all of the ingredients (that need to be chopped) into relatively small pieces
  • Combine all of the ingredients
  • Serve

I love this recipe. Love it. My entire family loves it, and every single party my parents ever hosted has always had a big ole bowl full for munching on. 

My in laws actually asked me to prepare this a party at their home recently. Isn't that a lovely complement? I mean, if they are going to be serving this to their guests, that means it's pretty good, right? Well, at least I like to think so. 

Anyhow, I'm going to stop gushing on about this recipe, just go ahead and make it! It's delicious, trust me! 

Oh by the way, in case you're wondering, my first day of the paleo challenge is going splendidly! ... but it's only 5.30 in the morning. The only thing I've had was my coffee and that was black. After I'm done here though, I'll be off prepping some lovely chicken strips for a few days!
