I've been doing some thrifting lately. It's always hit or miss, but I finally managed to pick up some photo supplies (fun colored napkins and some bowls). I love thrifting and finding some hidden treasures that I can repurpose! Plus, it saves money, which at the moment, is always a bonus.
What does this have to do with today's post? Well... I was putting my post together and yet again realised how plain my food arrangements are. Sigh. I have a few ideas for some DIY projects (and some tot school DIYing), but well, with the house coming up, a baby shower I am planning (my first one!), some major knitting projects for the handful of pregnant friends we have like this:

and my joint birthday party in September, I have a lot of DIYing on my list. Sooo, my very long winded point: I hope that my future food photos are going to have a little bit more color, and that I'll be able to add some nice touches to how I style my photos while keeping supplies cheap-o and not spending too much time on it. Keep an eye out!
Now, let's talk food:
Healthy Quinoa Salad Recipe
- 1 small yellow onion
- 1/4 cup bacon
- 1 cup uncooked quinoa (I used a mix)
- 1/4 cup corn
- 1 green onion
- 1 avocado
- Juice of 1/2 a lime
- Pepper to taste (you get enough salt from the bacon!)
- Optional: 1/2 a jalapeno or chili pepper
- Cook quinoa based on package instructions
- Pan fry bacon
- After it's let out some 'juices', add onion, jalapeno, and pepper to taste
- After the onion is cooked, add quinoa, corn, green onion, and lime juice
- Cut an avocado in half, then very carefully remove the pit.
- Plate it up!
Best of all - it was a winner with the Toddler! This child has amazingly healthy food preferences! If he has a choice between a French Fry or an avocado, guess what he'll go for? ... oh yes, avocado! I love that kid.
Actually, I have a story! We were visiting friends yesterday on a whim, and they had given their kids French Fries for dinner (We're in the Netherlands afteral). At first, the Toddler was quite interested in these weird colored fries as he typically gets baked sweet potato fries, which of course, are orange. But then! I got out a baked sweet potato I had brought with me just in case. The child shoveled that thing in his mouth. We were all amazed at how much food he could fit into such a teeny body, and he never asked for a French Fry!
