What I Ate Wednesday

Easy healthy recipes: What I Ate Wednesday
Like I mentioned in Sunday's meal plan post, paleo is just not realistic at the moment. It shows with what I've been cooking this week (grains), but I am really, really glad to say that these meals are all healthy except for the cocktail at the end, but shhh! That happens about once a year, so I don't mind. 

Anyhow, let's move on to the good stuff:

The Toddler was pretty pissed that I had some, too because he wanted it all for himself. The child doesn't like it when I eat something he likes even if he has the same thing himself. If someone else has it, the tragedy is avoided. If I eat it = end of the world. I think it's because I always share so he thinks if it's on my plate, it's his, too. Ooops. 


Corn, avocado, and egg salad on a tortilla with green onion and asparagus. This is one of my favourites.

This was such a hit with the Toddler! He absolutely adored it, and ate the same amount as I did! However, the real star of the day was...


I pan fried some asparagus with garlic, lemon and ginger, and also made my green bean one pot wonder dish, but with some kind of pork chop instead of chicken. 

This was another Toddler approved meal - at least the asparagus and quinoa were. The Toddler adored the quinoa salad. Actually it was the favourite with everyone, even my in laws who had quinoa for the first time! I need to buy it in bulk or something because it was just so good and so easy and so good for you!


Apples and a whole lot of them as per usual. Also added a few peaches to the mix.

This is the Toddler's portion because I devoured mine pre-photo, but it's the same thing, different bowl: 

Banana, 1 tablespoon peanut butter, a few raisins, and a sprinkle of chia seeds  = awesomeness! 


As always, far, far too much coffee, but I'm not nursing anymore so no guilt here! I'm also drinking loads of water as it is hot around here! 

We live in Europe, meaning air conditioners indoors are very uncommon. Sometimes when I think back on the years I spent living in the US, I feel spoiled. Big(ger) car, lots of closet space, driving an automatic, bigger roads, CHEAP gas (seriously - never complaining about how much gas costs in the US again... daaaannnnggg), less taxes, and of course, air conditioners. Sigh, at least we have excellent, but inexpensive health care. 

Oh! One more drink! One of my sisters in law was visiting and we decided to make mojitos. We had no rum, so vodka it was (Russian Standard is my recommendation for smoother drinkability)! We also had no limes, so lemon went in! The concoction, while not photographed, was very tasty and was a great way to end the evening.
