WIAW: Paleo style!

Hi there! It's week two of paleo, and it's going well. I have to admit, it's not as easy as I thought it would be, but we are generally sticking with it. I don't tend to like to follow any sort of diet/lifestyle 100% so doing paleo 100% all of the time has been a bit more difficult than I expected. I do generally eat healthy, and like paleo, but do allow myself to have some guilty pleasures every now and again. With this paleo challenge, those same guilty pleasures have been erased from my diet, and I haven't had the chance to make any paleo friendly treats. And I like my treats. And snacks. I guess it's part of the challenge though, to cut back on snacking and sweets. 

Anyhow, here's a look at what my family ate on Monday: 


Breakfast


Again, we had oven baked avocados with eggs:

Lunch


Soup with leek, carrot, celery, meat balls, and sprouts

Dinner


Broccoli lemon chicken (recipe coming tomorrow!). This was so easy to make and super tasty! At least hubby and I thought so. I made a huge batch and gave half for Hubby to take to work the next day.

Guess who refused to even try it? Oh yes, my son. He kindly dropped all of the broccoli on the floor and refused to even try the chicken. I replaced the broccoli with green beans on which I sprinkled chia seeds. Apparently, chia seeds and green beans are a good combination. I prefer chia seeds in puddings, yogurt, or oats, but whatever floats your boat kid. 

Snacks


  • Apple + nut butter + chia seeds + microwave = awesomeness
  • Nut mix
