Paleo Recipes: Easy beets recipe

One of the most important factors that contributes to my success on any sort of a healthy lifestyle is preparation. Especially when I am trying to be strict with paleo, I know I need to make recipes that can be prepped in advance. This easy beets recipe is one that I can either make in large batches in advance or simply prep by cooking the beets in the beginning of the week.

This recipe is a regular staple in my home - I whip it up whenever we have an overflow of beets, whenever I have a craving, or whenever I know we'll have a busy week. 

I mean beets are pretty awesome, right? They are so worth the time it takes to cook them, and the red hands I end up with because I inevitably dislike the feeling of gloves on my hands while dealing with food prep (although that's definitely an option if you prefer mess free hands). Also, don't wear white when cooking with beets. Or use an apron. I may or may not have a ruined white shirt or two in my closet. Oops. I still say they're worth it though.

Bonus: it's easily adaptable to be a great vegan recipe! 

Ingredients

  • 4 large beets 
  • 2 onions
  • 1 small leek (2 cups worth of thinly sliced leek) 
  • Lots of pepper
  • 150 grams or 5 oz bacon (in small strips) or 1 tablespoon coconut oil
  • Optional: Serve on a bed of arugula 

Instructions

  • Boil, steam, or roast beets - basically cook them in some way {This takes the longest and can be easily done up to three days beforehand. Depending on whether you feel like peeling and cutting them, it can take about one hour and a half to get them soft.} 
  • After the beets are tender {prick them with a fork. If it goes through the beet, they are cooked}, remove beets, and let cool
  • While the beets are cooling, get out a pan 
  • Add the bacon or oil on medium heat
  • Once the bacon has cooked down, add the onion
  • Mix occasionally 
  • In the meanwhile, chop up the beets into thin strips
  • After the onion is translucent, add the leek, beets, and pepper. If you aren't using bacon, add a dash of sea salt. If you are using bacon, it won't be necessary 
  • Pan fry for ten minutes, to finish the cooking process for the beets, and get the leek to be tender.
