Super easy Mr Toddler approved tuna salad

So tuna. It rocks my socks. My toddler on the other hand? It depends on his mood. If it's in a patty, well, anything in a patty is a guaranteed win, but in salad form, that is a harder sell. I made an easy tuna salad recently, and Mr Toddler devoured it! I loved that he got some sugar snap peas, cucumbers, celery and tuna and I had zero meal time battles {with the exception of the tomatoes that I repeatedly offer but are constantly avoided}! Plus, I thought it was really, really tasty. And I ate my tomatoes.

Easy Tuna Salad

1 adult and 1 toddler {I shared because I'm nice, but really, I would have easily devoured the entire thing}

  • 1 tin tuna
  • 1 tablespoon chives (fresh and finely chopped)
  • 5 cherry tomatoes (quartered)
  • 6 sugar snap peas (thinly sliced)
  • 4 tablespoons cucumber diced
  • 2 tablespoons celery diced
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (fresh)
  • 2-3 tablespoons extra virgin olive oil

  • Prepare all vegetables: dice the cucumber and celery, cut the tomatoes into quarters with a very sharp knife, use scissors to get thin, small pieces of chives
  • Place the vegetables into a bowl
  • Add tuna
  • Season with salt and pepper
  • Add the lemon juice. I cut off about one third of a large lemon and squeezed the juice into my hand, over the bowl with the vegetables. I caught the seeds in my hand and let the juice drip into the bowl. {make sure your hands are clean and washed. They should be anyway when cooking though!}
  • Pour extra virgin olive oil
  • Mix the ingredients well and serve!

Want something extra? Add half an avocado! I love avocado and tuna together and so does my little man!
