That one time I cooked dinner in ten minutes

So, this one time, I was really busy and I cooked dinner in ten minutes. Isn't that crazy. It took ten minutes from the moment I got my ingredients out to the moment it was done. Whhaaatttt? Have you seen that Jamie Oliver show? 15 minute meals? It's amazing, the man runs around and creates amazing dishes in 15 minutes. But he runs around. And is a professional. 

Yea, that so did not happen for me. I didn't run around that is, but dinner still tasted great! It was a bit random, I'll give you that, but it was super tasty, healthy, and easy! If you love easy, healthy recipes as much as I do, this one is definitely for you! Bonus: I have a vegetarian/vegan friendly alternative to this paleo meal!

Here's my ten minute dinner recipe:


Tools

  • Measuring cup
  • A spatula or something for stirring
  • Wok
  • A knife

Ingredients

  • 1 lbs ground meat  - chicken or turkey for light option 
  • 1 onion (roughly chopped. I didn't even use a cutting board, just sliced it in half after peeling, and then held it while slicing off thin half rings)
  • 1.5 cups frozen veggies [I literally use whatever is in the fridge] This mix had corn so it's not completely paleo, shhh!
  • 2 tablespoons chili spice mix [or pasta spices, or whatever it is you feel like having!]
  • Salt to taste 

Vegan or vegetarian? 

No problem, swap the meat for 1 cup black beans!

Instructions

  • Brown meat on high heat, being sure to mix frequently 
  • Add onion
  • Add frozen vegetables and spices [add black beans here, too if using]
  • Serve over leftover brown rice, cauliflower rice, or potatoes

Yep. That's it! I make this dish whenever I am pressed for time. The funny thing is is that it always tastes great, but is never the same. I use whatever frozen veg I have on hand, and whatever spices I feel like eating. It could be pasta spices, it could be the chili spices, or a random concoction of things I find in the pantry. Seriously. Sometimes there's just no time to think about dinner and to carefully plan. Sometimes, like during a crazy week, we need to eat quickly in order to get out the door again. This dish is the perfect solution for getting healthy and tasty meals together quickly!
