Whole 30 Meal Plan # 3

It's meal plan time! I have to admit that I'm not that into meal planning right now. I am a bit distracted, and don't really feel like cooking. Want to know whhhyyy? No, it's not my current struggle with Whole 30, which I am determined to overcome and get back to my normal. It. Is. Happening. I'm distracted because... 

In two weeks, my little baby is turning TWO. And I am turning 27. Yep, we share a birthday and we will be rocking our joint birthday party. We're going with a farm/tractor theme. Is that weird that I'm giving it a theme even though it's my party, too? I'm totally excited though. We even got Mr. Toddler his own tractor that he can ride on. He keeps trying to steel the neighbour kid's tractor so we're pretty sure that he'll be thrilled to discover his birthday gift! 

The funny thing is that even though I've been majorly slacking in the food planning department on the home front, the birthday party food plan has been done for a month, and I've even made some farm themed printables, and have a stash of supplies in the colour scheme. I need to plan some more decorations and perhaps think up a game or two, but I hope to have all the birthday plans done and ready to go a week in advance. No joke. Parties make me stressed and this year I am determined to get party tasks done in advance. The likelihood of that happening is pretty slim, but I'm trying. Ahhem. That was off topic. Back to what we're going to be eating this week! It's still whole 30 friendly, still involves loads of healthy recipes that I hope to prepare and stick to. I'm keeping it simple (for me) because I'm pretty sure that with party planning on the forefront, there's just no way that I'll be exceptionally motivated to cook. 


Breakfasts

  • Smoothies with kale and spinach [because we are again obsessed]
  • Fruit salad
  • Sweet potato hash

Lunches

  • Lettuce sandwiches with veg and grilled chicken
  • Stuffed baked sweet potatoes 
  • Deviled eggs 
  • Leftovers 

Dinners

  • Shephard's pie (recipe I'm still working on) 
  • Borsch (Russian beet soup, a favourite in my home) 
  • Roasted asparagus, steaks, and cauliflower and celeriac mash 
  • Sausages with roasted root vegetables
  • Unstuffed cabbage
  • Someone else cooks 
  • Leftovers
