Whole 30 Update & beet salad recipe

So it's been ten days. Ten days since I committed to doing Whole 30 with Lean Lena (Psst! Checkout her blog for some awesome recipes and fitness tips)! 

For me, it's been ten really, really tough days. With temptation all around, I'm finding it very difficult to get through the days without munching on processed snacks, especially in the evenings. With so much going on, I'm also finding it really difficult to prep enough for a successful day. It is stressing me out. And we don't have enough groceries. 

Okay, so that's a pretty easy solution: go to the grocery store and simply do some meal prep. Yes, that is my goal. I'm already planning my meals for next week, and am finally going to get my rear end to the big market this weekend to stock up on things like cauliflower, broccoli, berries, bananas, all sorts of deliciousness that costs a 'fortune' at the grocery store. 
So how am I feeling? I don't know. Is that a strange thing to say? Yes. See the thing is, I am generally running on low amounts of sleep because I'm staying up getting school activities done for my kiddo, getting up early to blog, and in between, am running around taking care of the Toddler and working on our house when I get the chance. Plus, we're planning everrryyything for said house and that's adding some stress. 

So I feel exhausted. Tired. And stressed. How much of that is from whole 30 and the changes in my diet? I'm not sure. Usually, I do really well and feel great when I am able to successfully stick with paleo. Now, I am constantly struggling not to snack.  

My goals for next week: 

  • Stock up on loads of fresh produce, especially 'fatty' foods like avocados and healthy carbs like sweet potatoes 
  • Meal prep on Monday - get some meat ready, make some cauliflower rice, and make one huge batch of something for my lunches
  • Eat more meat (lunches and breakfasts are frequently meatless which may be one of the reasons I am feeling so snacky)

Ingredients

  • 1 apple
  • 1 chicory (or endive) 
  • 1 cup leafy greens (I used beet greens and spinach)
  • 1/2 a small beet
  • A handful of crushed walnuts
  • Juice of half a lemon
  • Juice of half a mandarin or 1/4 orange
  • Salt and pepper to taste 
  • 1 tablespoon extra virgin olive oil 
  • 1/2 teaspoon balsamic vinegar

Instructions

  • Cook beets (recommend roasting, but steaming or boiling also works!) and let cool
  • Chop up endive, leafy greens, and apple
  • Mix together oil, balsamic vinegar, lemon and mandarin juice 
  • Mix together all of the above ingredients 
  • Season with salt and pepper 
  • Toss some walnuts on top
  • Enjoy!
