Easy, Healthy Recipes: Butternut Squash Fries!

So, I think I have a butternut squash problem. As in, I am obsessed. A few weeks ago, I went to the market and bought two large squash. It finally inspired some nom-tastic cooking, which resulted in about three healthy, new butternut squash recipes being created in one day. If it hadn't been for the random power outage that we experienced during nap-time, I'm pretty sure I would have taken out the second squash and cooked three more different meals.

Time

50-60 minutes total 
40 minutes cook time
10-20 minutes prep time depending on how quickly you can chop

Tools

1 super sharp knife
1 cutting board
1 spoon
1 small bowl 
1 baking tray
Optional: Baking paper

Ingredients

1 butternut squash
1 tablespoon coconut oil
1 sprig fresh rosemary 
Salt and pepper to taste

Instructions

Before you even start, be sure to preheat your oven to 200 degrees Celsius or  395 degrees Fahrenheit. Then find the sharpest knife you have: we're going to cut our squash in half!

Then, remove the seeds with a spoon by scooping them out.

You'll end up with this:

Then, separate the rounded bits from the straight parts. The round bits can easily be roasted whole, skin on and used for other delicious dishes. You could even stuff them like I did in my quinoa stuffed butternut squash recipe.

This next bit is the trickiest - you have to use your really, really sharp knife to carefully cut off the skin of the squash and chop it up into a fry shape. Or whatever shape you like, about 1 centimeter wide. Set aside your fries.

Next, grab your rosemary and finely chop it with your knife. Then, place the coconut oil into a small bowl and mix it together with the rosemary. I mixed them together with a fork, but a spoon would work just as well f you want to save on a dish *wink, wink*

Now, we're getting to the good stuff! Coat the squash fries with the herby coconut oil, add a tad of salt and pepper and into the oven they go! (200 degrees Celsius or  395 degrees Fahrenheit) Be sure not to overcrowd the plan or you will not get a crunchy result.

After 15 minutes, take them out and give them a quick flip. Bake for an additional 15 to 20 minutes and viola:

Please note, these aren't your typical potato deep-fried, fry. The texture will be different, but they are definitely delicious and so much better for you. I prefer mine this way much more because you just get such great flavours and, well, oven roasting always makes my taste buds happy!
