Quinoa pumpkin pie pudding

I love a good ole healthy dessert recipe! Since switching to paleo, I've actually noticed a decrease in the amount of sweets I crave, but every now and again, I like to create a little somethin' somethin' in the kitchen that while remaining healthy, certainly gives my sweet tooth a little satisfaction. Like this:

This week, I was so excited to use my freshly made pumpkin puree and made this very easy quinoa and pumpkin pudding! It reminded me of pumpkin pie, but lacked all of that sugar! While this isn't a paleo recipe due to the quinoa, it's still healthy!

2 (enough for 2 adults) 


  • 1/2 cup quinoa
  • 3/4 cup milk of choice, but I prefer almond
  • 1/2 cup pumpkin pie puree (I made my own by roasting a pumpkin and then pureeing it)
  • 1 teaspoon pumpkin pie spice 
  • 3 large dates - chopped or pureed in a food processor 
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons raisins
  • 1 tablespoon roughly chopped pecans

  • Cook quinoa in the milk on a low heat. First bring to a boil, and then simmer, being sure to mix frequently to prevent it from sticking to the bottom. You may need to add a few tablespoons of milk as you go. 
  • Once the quinoa is cooked about ten to fifteen minutes later, add the remaining ingredients. The milk should all be absorbed by now. If you have leftover milk, you can strain it. 
  • Mix everything together and enjoy!

I ate this warm straight away after it was done as well as cooled after dinner. I preferred it warm, straight out of the pot, but both ways are tasty.

This quinoa 'pudding' works as a lovely and healthy dessert, but would also make a good breakfast! I would however, skip the dates then as I found it a tad too sweet for a breakfast. Then again, I don't generally eat too much for breakfast.
