What I Ate Wednesday: So much healthy

Food. Lots and lots of food. It happened. And it was glorious. Actually, it was a little hectic, but I was pretty excited to get cookin' after stopping by the market. Here's instagram proof of the awesomeness of the weekly market we visit:

There were so many delicious (and cheap!) goodies that I couldn't wait to get experimenting and spent all of naptime in the kitchen! Sadly, Mr. Toddler was feeling under the weather so he needed loads of cuddles. I definitely can't say that I minded the cuddles, but it made it far more difficult to get any work done. Now, it's Tuesday evening, and I'm ready to get some computer time while the Hubby works late and get to bed! Here's what Mr. Toddler and I ate today {Tuesday}:

Breakfast 


Smoothie. Come on, were you really expecting something different? This is pretty much how we roll now-a-days.

Mr. Toddler helped me to make it. That meant that he repeatedly tried to steal all of the fruit from it. The kid asks for smoothies everyday. If he wants spinach, he sure can have spinach!

Lunch

Super green salad with a soft boiled egg and pecans. I was so excited to get my hands on some brussel sprouts at the market so we've been eating them pretty much everyday. Spinach and brussel sprouts are my current food obsessions.  

Dinner


For dinner I made a Dutch inspired cabbage and potato bake. I kept putting off cooking this, and hadn't even bothered adding it to my meal plan, buuut the cold, gray weather typical Dutch weather today just made me want to prepare something oven worthy and HOT (spicy). After raiding the fridge, realising we have everything, I decided to whip this together and add some extra cayenne pepper to help warm us up.

By this time of day, I had already done so much cooking (as in I spent the entire 2.5 hours of nap time cooking), neglected doing any work or homeschool prep, and just savored my kitchen time. That also meant that I wasn't able to snap too many photos of this, but trust me, it tastes so much better than it looks ;)  

Dessert: Quinoa pumpkin pie pudding


So. Much. Awesome. This was absolutely delicious, but a tad too sweet. I was hoping that it would make a yummy breakfast when the idea first came to me, but it definitely hit the spot as a post dinner dessert {and a pre-lunch snack... whoops}

Snacks


Sugar snap peas by the handful! I love getting goodies like that from the market. Sadly, that was probably the last time for the year! 

Dates. I accidentally kept snacking on them while making dessert.

And lastly apples and nut butter. This is my son's version. The reason mine isn't pictured may or may not be because I had the jar and a knife next to me so I could get extra portions of nut butter onto said apple. We may or may not have eaten too many apple slices. Not oops.
