Whole 30 friendly meal plan

After the craziness that was birthday party planning, organising, cooking, and decorating, I am so looking forward to a calm week. I'm excited to cook simple and tasty meals, and maybe test a recipe. Easy is definitely going to be my goal as I wind down from party mode, get organised with homeschool, and maaaaaybe start thinking about the upcoming holidays.

I realised that in October I will be throwing a baby shower, in November I'm hosting Thanksgiving (not celebrated here but I think it's fun), and then of course there is December: Saint Nicholas' Day, Christmas, Hannukah, Russian Christmas, and New Year. That's a lot of holidays.  In the Netherlands, Saint Nicholas' day is pretty much the biggest and best-est holiday (6 December), and the stores are already starting to bring out themed goodies!

Like I said, this week, I'm keeping things simple and relaxed before all of the above needs to get planned and happen. My goal for the week is to make loads of leftovers for lunches and breakfasts, while keeping dinners light, healthy, easy, nom-worthy. The usual, but with a bit more emphasis on the leftovers than I normally tend to.

Here's my paleo meal plan for the week!

Paleo Meal Plan {Welcome to Mommyhood} #paleo #mealplan

  • Simple wraps (using big, leafy greens as the wrap with sliced carrots, lunch meat, whatever we happen to have on hand).
  • Leftovers

  • Bacon wrapped sausages with roasted carrots and potatoes
  • Spinach meatballs or meat ball muffins or meatloaf (I'm undecided about the amount of time I want to commit to this plan, but spinach from the garden will be going into some form of ground meat thing) with a side
  • Cauliflower and celeriac mash with roasted garlic and artichoke stuffed chicken

  • Paleo zucchini lasagna with spinach and mushrooms and ground meat
  • A Dutch bake called 'Hot Lightening' with apples, potatoes, pork, and red cabbage.
  • Grilled chicken and roasted vegetables
  • Someone else cooks
