In spite of all of the fun I've been having in the kitchen lately, once I sat down to figure out what we'll be eating next week, my mind suddenly went blank. After a look through my idea notebook, I think I've created a plan that's fairly easy and yummy with a few recipes I've been meaning to test! Here's what's on the menu this week:
Healthy Meal Plan
Breakfasts and lunches
Loaded frittatas or omelettes
Raisin, apple, and sweet potato bake
Sausage and cauliflower soup
Paleo breakfast tortillas
Green bean one pot wonder
Oven roasted endive with thyme and bacon and ginger chicken
Beef and potato stew with a raw celeriac and beet salad
Loaded mashed potatoes with a side of spinach meatloaf or meatballs (Recipe will finally be coming soon!)
Someone else cooks or take away (or probably nutella sandwiches at our construction site 'cuz that's been happening)
Pumpkin chia seed pudding! It will happen and it will be glorious!
