Baked sweet potato bowls

This isn't quite the Toddler related post I usually share on Tuesday, but I have a delicious new recipe! It's so easy, and so tasty, I couldn't help but share with you guys! Plus, this dish contains two of my favourite ingredients - spinach and sweet potatoes!

I am usually quite lazy when it comes to breakfast. If you've seen any of my What I Ate Wednesday posts, you'll know that my usual routine is a green smoothie with a hard boiled egg on the side. For that to get replaced, I really need to make something that is still quick  - and I'm talking about 5 minutes of work- quick. 

This breakfast bowl is not only seriously fast to prepare, but it's also a great way to warm up in the mornings. Plus, it's tasty, so of course there's that! 

Healthy breakfast recipes: 

Baked sweet potato bowls


25 minutes total 
5 minutes prep
20 minutes cook time


2 adult portions  


  • 2 large sweet potatoes (1.5 cups)
  • 1 tablespoon extra virgin olive oil or coconut oil
  • Salt and pepper to taste
  • 1/4 teaspoon paprika powder
  • 1/4 teaspoon cayenne pepper
  • 2 cups fresh spinach 
  • 2 eggs 
  • Optional: 2 strips of bacon or prosciutto 


  • Preheat oven to 400 degrees Fahrenheit or 200 degrees Celsius 
  • Dice the sweet potatoes
  • Add the olive oil and spices to the potatoes 
  • Place them into an oven safe dish - I dived them equally into these fun rooster bowls

  • Bake for 15 minutes, making sure to stir half way. Remove from oven.
  • Add the spinach and mix the spinach over the sweet potato 
  • Crack an egg on top (make sure to cover up the spinach pretty well so that it stays moist)
  • Add bacon or prosciutto if using
  • Place back in the oven for an additional 5-10 minutes until the egg is cooked to your liking
