Butternut squash with a sage butter sauce

With Thanksgiving coming up sooner rather than later, I've definitely had Thanksgiving dinner on my mind. Sadly this year, we won't have a big ole Thanksgiving bash because of the ongoing house situation, but I will be making easy Thanksgiving recipes throughout the rest of the month to get us in the holiday spirit! 

One of the my recent favourites is pan fried butternut squash in a sage and butter sauce.

This squash was seriously delicious, easy, and oh my gosh, it so hit the spot! The key to this recipe is the fresh sage that infused the sauce and took it to wow!

I have had my little sage plant outside since we moved in here, and it's been waiting patiently to be transplanted into what will become our garden at the new house. Sadly, it still has to wait a bit of time, and I fear it won't make it. Mainly because I keep snipping leaves from it faster than it can grow them. But you guys, it's so good! 

When we first started clean eating and then paleo, I really realised the importance of herbs and spices to totally transform a dish and take it from meh to a level of OH MY DELICIOUSNESS - get into my face. And! Not only is that true, but fresh herbs are like magic. 

Grow some. In a window sill. On your balcony. Okay, maybe not on your balcony if you live somewhere that is getting massive amounts of snow right now, but really, get a small plant. Your taste buds will thank you!

Where was I? Oh yes, sage and butternut squash! This was the first time I had actually paired sage with butternut squash and rest assured, it most certainly will not be last. I think I'll need another sage plant...

Butternut squash with sage butter sauce

Time


20 minutes (12-15 minutes cook time, 5 minutes prep)

Portions 


2 adult portions as a side dish

Ingredients


  • 50 grams butter (3.5 tablespoons)
  • 7 sage leaves 
  • 2 cloves of garlic
  • 2.5 cups butternut squash (cut into matchsticks) 
  • Salt and pepper to taste 

Instructions


  • Heat a pan with the butter on medium-high heat
  • Add garlic (peeled) 
  • After about 3 minutes, once garlic is starting to gain some colour, add the sage leaves
  • Pan fry for an additional 3 minutes  (stir frequently)
  • Remove the sage and garlic from the pan 
  • Add squash, salt and pepper
  • Mix well, and pan fry quickly still on medium-high heat. 
  • Pan fry for approximately 7-10 minutes or until the squash is soft and slightly browned. How long they need to cook depends on how large you cut them. 
  • Remove from heat and serve with 1-2 more leaves of fresh sage (you can use kitchen scissors to cut it over the squash) and almond slivers
