WIAW: Fall Deliciousness

So food. It's awesome. Just sayin'. I always get so excited about these WIAW posts! I just can't wait to share with you folks the the creations that have been brewing in my kitchen! Today, I'm sharing meals from Monday, a day full of healthy meals that was oh so necessary for my sluggish body after a weekend of working on the house. 

The house? Yea, it's still in a rough state. I lugged a bunch of bricks all weekend to clean up a bit. Best workout ever. My arms are still like jello. Hubby made it totally worth it by cooking up a fancy stake dinner on Sunday, of which I don't have a photo because it was dark and my cellphone refused to cooperate. 

Here's what I did manage to capture on camera: 


Breakfast


Herb omelette because it's delicious.

My apologies for another recycled breakfast photo. Lighting is definitely not to my advantage at about 7 in the morning! 

I'm finally starting to get over my smoothie obsession. I guess it's back to eggs now that the weather is getting cooler. 


Lunch


This was a bit of a last minute experiment, but I made some pan fried butternut squash with a sage butter sauce. Mr. Toddler ate most of it. He kind of adores all orange veg. I also fried up some eggs (not pictured) - a bit boring, but the fries were definitely fun!

I also started on dinner at the same time, and kind of devoured an obnoxious portion of ... 

Dinner 


Roasted vegetables. If you follow me on instagram, then you saw a sneak peak of this, but oh my word it was delicious! And so simple to make! I may or may not have consumed about half of this gigantic portion of delicious root veg prior to serving to my family.

Another yum-tastic green beans recipe! Again, this was a super easy one to make and hence the reason why so much cooking is able to get done in one day.

We had green beans from the garden that had been frozen during the summer and some pork chuck. This one takes a while to cook, but it was a 'dump and go' type of dish so the effort was minimal.  


Oh and in case you're wondering if I managed to stick to the meal plan, the answer is kind of. I was going to make my easy green beans casserole, but ended up making the above instead.
