A sort of bloggy break and WIAW

Hello everyone! I hope you are all having a fabulous holiday season! I'm popping in to say that I'm going to be taking a short break from blogging for the rest of year! 

With all of the craziness we have going on with our house, I really need to spend a little bit of time getting reorganised and spend a bit more time with family. 

I bet most of you are all busy with last minute holiday preparations yourselves! I would like to wish you all Happy Holidays and a fantastic start to the new year! 

Oh, and here's some dinners that I ate last week!

Beets, smashed white potatoes, arugula, feta cheese, and balsamic vinegar with a side of paleo meatballs. Fantastic recipe vis a vis one of my sisters in law. Will be happening again for sure. I love beets as much as I adore brussels sprouts! 

A sort of cabbage stir fry! It was really good as a dinner, but I'm not going to lie that I was totally looking forward to crispy leftovers for breakfast more. Topped with a 'sunny side up' egg, they were a keeper! 

This last one ended up being a bit weird. I cooked it up with the idea that we'd eat it the next day. The thing is though, that I don't like using roasted brussels sprouts as leftovers. I really ended up not looking forward to this meal. 

But then! I discovered some chili and garlic infused olive oil. I pan fried the chicken and sprouts to reheat them with an additional onion (purple variety), and loads of infused olive oil. The sprouts got re-crunchy, and the chicken remained most on the inside. This was also another keeper!

All in all, in spite of the craziness that is happening right now, we've been able to at least get pretty healthy and mostly paleo (aside from the feta in the first dish) dinners! Lunches and breakfasts have been on the run, consisting of whatever it is that we grab as we head out, but if that means our house gets done sooner, I'm okay with it!
