Let's chat & healthy, paleo meal plan

Last week I mentioned how I was kind of in a cooking rut. I spent a bit of time reflecting, and well, I guess we're going to have a bit of a frank, pretty personal chat about why. If you're here just for the food, be sure to scroll down to the bottom of this post for this week's healthy, paleo meal plan!

You've been warned, this is going to be wordy!

There's been something gnawing away at my heart lately ... due to all of the delays we've had with the house, we're not only behind schedule, but we're also going to have to put off TTCing once more. We've had a date in mind in 2014, but realised when we embarked upon the constructing our house project that that date would need to be pushed back until 2015. Now, it looks like we'll have to wait (at least) a few more months. A few months.

It's not that long, right? But I'm getting seriously anxious and upset about it. We knew this was a risk and made the decision about the house, but now I have all of these fears and anxieties about being able to conceive again. Maybe that's why I haven't been sleeping as much, have been in a foul mood, and haven't been enjoying cooking (and even blogging) as much. It's hard, it sucks, and I've definitely been enjoying an extra piece of chocolate (or ten), along with a glass (or three) of wine while wallowing in my own self pity and whine-i-ness.

Here's the nonsensical part though - I mean, logically we need our house to be done, and that's a nice thing to put off baby land for. And we already have an amazing child. But, he's getting older and I see it everyday. The gap between Mr. Toddler and a potential future babe is getting bigger. I'm also not getting any younger here.

I have this perhaps irrational fear that we'll have a problem conceiving again. You never know with these things, and many women have suffered miscarriages in my family. That thought of loss (when we haven't even started trying!) terrifies me. But even that means I'm assuming we'll actually be able to conceive. There's no logical reason to assume we'd have problems. I'm just getting older and it scares me. I think way too much about it, too.

And by the way, when folks are constantly asking ya when you're next one is coming, it seriously does not help. As in leaves me in tears so yes, I know my child is TWO, and yes, it is common here for people to have kids really close in age to each other, and I want that, too, but don't remind me, please. We need our house to be done. I don't think that all of the grocery stores in the entire Netherlands will have enough chocolate to help me with that if those questions and comments continue.

Oh, ouch, this got super personal. I hope I didn't scare you off there! I like to keep things light around here, buuut every now and again, I feel like I should also share a bit about our lives with all you wonderful folks. So that's it, I'm in a super weird, emotional point at the moment.

I'm trying not to be so negative about it all. I'm trying not too think about it ALL. THE. TIME., and I'm trying to see the positive - we'll be able to save more, we'll be in a calmer place, Mr. Toddler being older will mean he'll understand more if/when the time is right.

For now, I'm going to keep working on my online 'baby' here, focusing on our house. The Husband has a holiday starting upcoming Friday, which should mean that we'll get some major work done, and MY GRANDPARENTS ARE COMING!!! Okay, I'm actually super excited about that one! They'll be here until the beginning of January. You folks are in for an obnoxious amount of amazing Russian recipes.

And speaking of food, here's my...
