Meal Plan, December Week 4

Guess what! Guess what! Guess what! My husband is on holiday from work! He's off until 5 January! Even though we will be spending each and every single day until then working on our house, I'm still excited to be seeing him more frequently, eating meals, and drinking coffee together. 

We'll be working on the roof of our house these next few weeks. There's nothing like working on construction to bond a husband and wife -.- It should mean some major progress on the house though which is seriously needed. I'm really starting to get quite annoyed with how slowly things are moving so I am also hoping this time will get me to a more positive place about it all. This entire experience has been a true test of our patience and mine is really wearing thin. Sadly, there's still a lot of work left to do. 

The really positive aspect of it though is that we will have a very customized house in the end. We'll even have something really not Dutch in the end - a large laundry room and fairly large bedrooms! Plus a whole lot of land for playing, building tree houses in the chestnut tree, and a separate space for my fruit and veg garden which will happen next summer. So this long process 

Back to food? Because we will be at the house all the time, I have no idea how well I'll be able to stick to the meal plan. We do have a caravan there with a functioning kitchen and a mini oven so this should be feasible, but really depends on how I'm feeling at the moment. We'll see how it goes, but for now, here's my idea of what we'll be eating:

Delicious roasted lemon-thyme chicken (recipe coming soon) with stove top bacon-carrots

Paleo beef stroganoff 
Paleo-ified 'sphaghetti' and meatball soup
Ordering out with the husband 
Christmas dinner with the inlaws 
Someone else cooks

Breakfasts and lunches

Leftover chicken to make a cabbage breakfast hash
Beet salad & other salads
Ginger sweet potato hash
