Smashed Sweet Potatoes

Hi. So there are currently 72 drafts in my draft box. 72. Today, instead of actually finishing one of those up (they seem to multiply like mad lately, but remain unfinished), I'm sharing something new. Because this was lunch yesterday and it was delicious:

Guess what else? These smashed sweet potatoes were devoured by the toddler. I was sitting with him while he munched on these for lunch and actually thought he had tossed them on the floor, but nope, they were just inhaled at lightening speed. Although, I do have to admit, the greens weren't consumed. I had no hope for that anyway.

I mentioned in my meal plan post on Sunday that my food inspiration was gone, but that smashed sweet potatoes were the sole dish that I knew I wanted to consume. These turned out a little differently than what I had imagined, but oh my yum! I'm not sure if this means that all sorts of creativity will be returning now, but these were certainly fantastic! Even my kid devoured goat cheese for the first time, so there was definitely something worth consumed here.

Speaking of goat cheese... I kind of love it. I do stay away from cheese the majority of the time (with paleo and all),  but Dutch cheese is pretty amazing. If you find yourself in the Netherlands, splurge on cheese. Like most things, I try to eat it in moderation, but there are really so many different kinds of cheese, flavours, and different ingredients that they add to it here, like spicy cheese, old cheese that's been aged and crumbles when you cut it, cheese with cloves, and more variety than I can explain. 

Oh, a bit of a cheese tangent, but let's get back to these smashed potatoes and all of their deliciousness. I've been craving them for weeks, but one idea or another kept coming up and then I couldn't find the small sweet potatoes I had envisioned for this recipe. Then our refrigerator stopped refrigerating and the spinach went bad so I obviously couldn't consume sweet potatoes without greens. Yea, I'm like that.

Anyhow, this recipe is so easy, and so delicious, and light, and full of wonderful flavour combinations! The sweetness of the potatoes is offset by the goats cheese distinct flavour. The nuts add some crunch, and the greens add a bit of healthy something something to the dish!

Time

30 minutes

Portions 

2-3 portions, but you have my permission to eat this all yourself

Ingredients


  • 4 sweet potatoes
  • 2 tablespoons extra virgin olive oil (or other oil of preference)
  • Salt and pepper to taste
  • 50 grams of goat cheese (2ish tablespoons or however much you want) 
  • A handful of greens - I prefer baby greens and arugula, but this is up to you. 
  • A handful of nuts (I used a mix of walnuts and brazil nuts, roughly chopped) 
  • 1 teaspoon red wine vinegar 

Instructions


  • Preheat oven to 225 degrees Celsius 
  • Peel sweet potatoes and cut in half (if you choose, smaller potatoes, means less cooking time) 
  • Drizzle potatoes with oil and sprinkle with salt and pepper 
  • Bake for 45 minutes to 1 hour (check on them after 45 minutes by pricking with a fork. If the the fork goes through all the way easily, then they are done. If not, place back in the oven for an additional 15 minutes) 
  • Remove from the oven and let cool for 5-10 minutes. Then take out your 'smashing device'. Here's what I did:

  • Some of the potato stuck to the spatula, so I used a knife to it off. 
  • Crumble goats cheese on top

  • Place back in oven for an additional ten minutes - this will really get the cheese gooey and melty and awesome
  • Remove from oven
  • Add greens, nuts, and vinegar
  • Dig in straight away!
