WIAW: mostly paleo Monday

Happy Wednesday everyone! I hope you're all having a lovely week and not stressing too much with Christmas and Hanukkah coming up. I think my husband and I semi-officially decided to not do gifts this year. Yes, zero presents, not even for the toddler. 

Here's the thing, we have already been through Saint Nicholas' Day, and already are overflowing with stuff that seriously needs to be downsized. And we got a second car. And the ongoing house project that seems to be never ending. So, our holidays will be spent kicking up the house stuff into high gear so we can move in at some point before we turn 90. Okay, I'm exaggerating a little bit. 

My point was, I haven't thought about Christmas and Hanukkah gifts (we did gifts for Saint Nicholas' Day), and I'm already so over it. Mr. Toddler has so much stuff, and I have no desire to add to it. Plus, it's nicer to think about spending some quality time together as a family during this time of year rather than get stressed out about what to get everyone. The whole gift giving thing also seems to typically fall on my shoulders while hubby goes out last minute to pick out whatever happens to be on my list of kitchen goodies that I want and is done in an hour or two. I'll probably end up changing my mind a few days beforehand. 

Oh yea, it's What I Ate Wednesday and I went on another tangent as is per usual with these posts. Here's the food from Monday: 

Mostly Paleo WIAW


Breakfast has been boring. I mentioned my food rut, and breakfast is where this has hit the hardest. I'm too tired and so not in the mood for it. Here's what has essentially been breakfast for the past week:

It's okay that I eat fruit for breakfast though, right? I arranged it as a happy face to make up for my laziness. 


By the time lunch rolls around, I've been pretty hungry as coffee and fruit don't really cover it as a filling paleo breakfast. So, I made these amaaaaazing smashed sweet potatoes with goat cheese. Seriously, you need to make them!

More stew. Like last week. I've been into warm, hearty stews. I served this with a side of potatoes and brussel sprouts though - a typically Dutch type of meal so my in laws would be happy. Hubby was annoyed and wanted pasta. The man has a serious dislike of potatoes. I guess it's from eating so many of them as a kid. I need to start getting more creative with meals that everyone will be happy with  I suppose.

The stew also took the place of the chuck roast on the meal plan. Apparently, every cut of meat looks the same in the freezer. 


More fruit. While everyone seems to be all into Christmas cookies, I'm over here stuffing my face with fruit. It's purely out of laziness though. I don't really like all of the effort that baking takes. Don't get me wrong though, if someone brought me some cookies, I'd probably eat them. Instead, I simply popped some apples in the oven (significantly less effort, less dishes, and actually healthy).
