Easy breakfast - veggie loaded egg scramble

Breakfast is a very difficult meal around here. Munchkin is clingy, but hungry, I'm tired... this is an easy one that I can whip up with little effort. But it is sooo good, and equally as good for you!

I love easy and healthy recipes like this broccoli soup. The best part - even though it still has a fantastic, creamy texture, the only ingredients are veggies, making this not only a clean eating recipe, but also great a vegan meal that is easily adaptable to be a fantastic paleo dinner. This soup is a regular in my kitchen - even my son will gladly gobble it up!  The Toddler could seriously eat this for breakfast, lunch, and dinner. Nom nom.

Healthy Meal Plan and getting fit post pregnancy

I've decided to get fit. I've been feeling pretty down about how I look lately. Now that munchkin is almost a year and a half old, I decided it's time to do something about it. I'm going to work out. I'm going to overhaul our eating habits around here. Regardless of my husband's desires, he needs to eat a bit healthier, too, so I'm also going to make sure he eats healthier lunches at work. Okay, okay, I'm not that controlling, he also thinks it's a good idea, but won't be going as extreme as me, which is fine.

Here's the thing - I'm not that big, and I'm not overweight. In fact, I have a normal weight for my height, and a normal bmi. I am 5 feet 1 inch tall, and weight about 125 pounds or so. We don't have a scale at home, so I'm not exactly sure. Based on that weight, I have a bmi of about 23.6. However, my stomach just isn't flat. I look like I am still about three - four months pregnant. I hate it. I've also carried more weight in my tummy that other areas, but now, I can feel that my thighs have grown, and my arms are starting to jiggle. Plus, ... I'm getting older. Eek.

Not really mac and cheese recipe

Healthy 'mac and cheese' recipe

I fully intended for this to be a healthy mac and cheese recipe. I did! I spent some time thinking up the perfect recipe, got the Toddler to go down for a nap, and prepared all of my ingredients. Then I looked at the macaroni, and I wasn't feeling it. Nope, not in the mood.

Macaroni was swapped for fettuccine. Then the cooking commenced, and the final result was delicious, but definitely not macaroni and cheese! I present:

Servings

Two adult portions and one toddler portion

Ingredients

  • 1/8 cup whole wheat flour
  • 2/3 cup milk of choice*
  • 1 cup (frozen) peas 
  • 1/2 cup (frozen) spinach
  • 1/8 cup grated cheese. I used parmesan
  • 1 cup pasta 
  • Salt and pepper to taste
* I used whole milk because that's what we had, but normally, I do use skim in recipes like this. Obviously skim milk will make this recipe lower in calories than whole, but you may need to add an additional tablespoon of flour or cornstarch to thicken everything up.

Instructions

  • Cook pasta based on package instructions 
  • While the pasta is cooking, add milk and flour to a pot 
  • Bring to boil then simmer for two to three minutes
  • Once the milk mixture has thickened, add the vegetables 
  • Note: for a fully creamy sauce sans the bursts of peas, you can just puree the peas and spinach before adding them to the milk
  • Let this simmer slowly until the the veggies are cooked 
  • Add the cheese 
  • Turn off heat immediately and whisk in the cheese

Done! I added some chives and a small squeeze of lemon juice to it.  I suppose it could have been a green mac and cheese had I pureed the spinach and peas rather than just adding them, but I was impatient.

I love this recipe. It was one of those rare instances of kitchen bliss as I prepared and everything just came together beautifully, and it was very quick. Granted, this wasn't the vision I initially had, but the final result- yum! I love that it's loaded with amazing greens, I love how the peas burst in your mouth, and the extra kick from the chives and lemon. The Toddler loved it. He gobbled it up excitedly, and I was very pleased to have found a new way to get him to eat spinach! The Hubby even enjoyed it, and he doesn't like mac and cheese. Well, it's not really mac and cheese, not even a little. It's more like fettuccine alfredo? Right? Something like that.

Toddler clothing haul

After a trip to the city yesterday, I picked up a few sale items for the kiddo - I spent a total of 9.50 (euro) for two pairs of shorts, one pair of thermal pants, and two packages of socks. 


Here's a short run-down of what I purchased: 
1. Navy shorts - 3 euro
2. Camo shorts - 2.50 euro
3. Thermal pants - 1 euro
4. Package of 5 socks - 2 euro 
5. Package of 2 thick socks - 1 euro 

Pretty cheap! I'm glad I found the shorts because we were a bit unprepared last summer - the weather here was pretty cold until July, so a lot of the summer clothing we had purchased was already small by the time it got warm here. I was expecting the summer season to be done by August because I tend to find it a bit chilly here. Anyway, I'm determined to be prepared this summer, but I hate buying in season clothing because it's always overpriced. I was quite glad when I went to an outlet to find these shorts, and I've picked up a few other items during the end of season sale in August/September last year. 

Munchkin also needed a few more socks and thermal pants. Now, I really need to find some nice shoes for him, but that's a lot more difficult.
