Baked un-stuffed cabbage recipe

I feel like so many of my recipes include cabbage. Okay, I know that that's true. Maybe it's because there are just a million recipes with cabbage that remind me of my family, and Russia, but I kind of have been loving on it lately. 

One of my favourite dishes that my grandma prepares is stuffed cabbage. The thing is though that I find it such a time consuming process to actually stuff said cabbage. Instead, I simplify and make it easy, quick and Whole 30 approved: by not stuffing it, and I even baked it!

This recipe pairs wonderfully with cauliflower rice to take your dinner to a whole new level of delicious vegetables! 

Pssttt!! For my non-meat lovers, skip the meat. Really, just leave it out, no alternative. You'll need slightly less liquid, but the recipe will still work!

Baked unstuffed cabbage

Time


1 hour 

Portions 


4 adult portions  

Ingredients


  • 2 lbs or 1 kilo ground beef  
  • 1 large, yellow onion
  • 1/2 a head of green cabbage 
  • 3 shredded carrots 
  • 1/2 cup of stock or water (use homemade stock or water. For vegans/vegetarians, use 1/4 cup water) 
  • 2 tablespoons tomato paste 
  • 1 tablespoon paprika powder 
  • 1 tablespoon dried rosemary
  • 1 teaspoon thyme
  • 1 cup chopped tomatoes (I don't bother removing the skin, but you can blanch them, then remove the outer skin if you prefer)  
  • Salt and pepper to taste
  • Optional: 1 chili pepper

Instructions


  • Preheat oven to 200 degrees Celsius or 395 degrees Fahrenheit 
  • Heat oil in wok or pan
  • Brown meat 
  • Add onion, garlic, and spices

  • Add cabbage

  • Add shredded carrot



    • Add spices and herbs, chili pepper, tomato paste and chopped tomatoes 
    • Place in pre-heated oven for 20 minutes (covered) 
    • Remove the cover and place in the oven for an additional 20-25 minutes
    • Serve on top of cauliflower rice
