Easy, healthy pizza recipe

One of the foods that my son has been absolutely loving lately is pizza. He frequently asks for it, but we do try to keep our food light and healthy around here. Home made pizza, as in dough from scratch, is more my husband's thing. I always tend to prefer cooking that requires a bit less effort than rolling out dough and ohhh the mess that is leftover. 

My solution has been to throw it on a tortilla! My toddler doesn't care about the difference, but always exclaims excitedly that we're eating pitttttzzzzaaa. Yes, he says it like that. With a T. Because that's the proper spelling obviously.

Tortilla pizza

Time

10-15 minutes  

Portions 

1 adult portion

Ingredients


  • 1 tablespoon tomato paste
  • 1 whole grain, tortilla wrap
  • 2 slices of salami
  • 2 white, button mushrooms
  • 2 chives (fresh)
  • Several fresh cilantro leaves 
  • 25 grams goat cheese
  • Salt and pepper to taste

Instructions


  • Preheat oven to 400 degrees Fahrenheit or 200 degrees Celsius
  • Once the oven is preheated, place the tortilla in the oven for 4-5 minutes. This will make it a bit more crispy. 
  • Remove it from the oven 
  • Place tomato paste on the tortilla
  • Add all remaining ingredients except for fresh herbs
  • Place pizza in oven for an additional 5-7 minutes so that the mushroom is cooked, and the cheese gets a bit 'gooey' and melts
  • Remove from the oven, add fresh herbs and dig in!
