Easy oven baked green beans

There's just something about green beans that I can't help but love. They're easy. Really, really easy to cook. They're full of delicious green bean-y flavour.

Green beans are a staple in my household. They're always devoured immediately upon preparation and even my little sidekick (Mr. Toddler) is a fan. 

I've really been trying to get him involved in the kitchen more often lately. One of the necessary ways that we've also been learning more about cooking is to get him more involved in grocery shopping (and perhaps to make it slightly less painful for all parties involved). 

Mr. Toddler has been a champ and loves tossing vegetables into our shopping cart. On one of the last trips to the grocery store, he eagerly picked out green beans. The very green beans that were the inspiration for this fabulousness: oven roasted green beans

This recipe was actually the first time I've ever roasted green beans. I love roasting. Love, love, love using the oven for a quick and flavourful way to cook vegetables to perfection, but my green beans always seemed to be paired with bacon, paprika, and onions.

This time, I was eager to try something new. Instead, a simple combination of green beans, garlic for flavour, cashews for crunch!, and paprika powder for a smoky richness took this vegetable to a whole new level of yum! 

The final result were crispy, baked green beans that popped with simple flavours. Mmm. 

...But what about paleo? Green beans are more of a pod than bean. So they're paleo. Just sayin'. We eat them in my family, and no one has trouble from 'em so they're staying!

Oven baked green beans 




Time


25-35 minutes

Portions 


2-3 adult portions (as a side) 


Ingredients


  • 1 lbs (1/2 kilo) green beans
  • 2 tablespoons extra virgin olive oil or coconut oil (warmed)
  • Handful of cashews
  • 1 tablespoon smoked paprika powder
  • Salt and pepper to taste (we use Himalaya salt) 

Instructions


  • Preheat oven to 185 degrees Celsius or 365 degrees Fahrenheit 
  • Wash green beans and cut off the tips 
  • In a bowl, combine all of the ingredients 
  • After mixing well, place on baking sheet  
  • Bake for 15-20 minutes (make sure not to overcook. No one likes a limp and overcooked green bean)
  • Enjoy
