Napa cabbage stir fry

I kind of adore anything and everything that is Chinese food. Sadly, here in the Netherlands, I find that not only is the Chinese food (in our general vicinity) not too tasty, the same in every restaurant, but it's also super unhealthy. It just doesn't resemble the amazing food I encountered on my trip to China over ten years ago. Siighhh. 

Unfortunately for me, I still haven't been able to recreate those flavours in my kitchen either. However, I have taken to woking, stir frying, and using some amazing ingredients like chicken and ginger, which I fell in love with on said trip. And napa cabbage:

Now, I'm not claiming this is authentic, as it isn't. It's basically a creation that happens frequently when I rummage the fridge and think of what I'm in the mood for. That's actually exactly what happened with this dish, and since then, it has become a staple in my kitchen. 

I have really fallen in love with using napa cabbage in stir fries in general lately.

Here's the thing with them - the leaves on the top bit of it cook very quickly, but the white bit of it, takes a few minutes longer. When I prepare leafy greens, I like to use as much as possible. You can definitely eat the white, stem-y bit of the cabbage, but it is important to separate it. 

Simply, chop of the green leafy bit from the stem, and cut the stem into thin strips! It adds some crunch to your recipe, and this way, you get less waste without overcooking the leaves!

Chicken stir fry

Ingredients


  • 1 tablespoon coconut oil
  • 5 chicken slices 
  • 1/2 tablespoon fennel seeds 
  • 1/2 teaspoon chili flakes
  • 1 teaspoon laos (or ground ginger) 
  • 2 tablespoon cocos aminos 
  • Thumb sized piece of ginger
  • 1/2 leek 
  • 2 tablespoons nut butter
  • 1 napa cabbage
  • Optional: serve with almond slices 


Instructions


  • Heat coconut oil in a wok on medium-high heat. 
  • Add chicken (sliced into small pieces), stir frequently. When you're woking, the idea is to cook on high heat, quickly! 
  • After about 5 minutes, the chicken should have gained a lovely golden, brown colour. Add the spices, ginger, and cocos aminos 
  • Cook for another 2-3 minutes, being sure to stir frequently 
  • Add leek (you can chop it beforehand. I cut it lengthwise to get strips that were about 2 inches long). Add the firmer, white end of the napa cabbage now, as well. Turn the heat to low/medium.

  • Cook for an additional 5 minutes, or until the leek has lost it's bright colour. It should be a bit softer, and the flavour will be milder at this point. 
  • Add the napa cabbage leaves. Wok for 2-5 minutes. We prefer to keep our vegetables on the firmer end, but if you prefer softer, more cooked vegetables, cook longer. Be sure to mix frequently and turn down the heat. 
  • Turn off the heat and add the nut butter. Mix well and serve immediately. 

And evidence of this recipe being family friendly: Mr. Toddler crashing my photo shoot! He brought his own fork, but choose to give the chop sticks a go instead. Clearly, his method is very efficient.
