Paleo pasta sauce recipe

My husband loves pasta. All sorts, all the time, any time of day. If he could pick one food to eat for the rest of his life, it would be some sort of pasta with a red, meat and vegetable sauce.

Before moving to the Netherlands, I always had this image of pasta sauces being simple - something with meat, a red sauce sauce with a tomato base, some onion, spices, etc. Here in the Netherlands, it seems like pasta sauces become an excuse to use up all of the vegetables that are still in the refrigerator. I can't say that I'm complaining about that, me and vegetables do seem to go together beautifully. 


The only problem with the veggie loaded pasta sauces that my husband introduced me to is that the spices and thickeners came from a box. With loads of E numbers, chemicals, and whatever other 'magic ingredients', one is likely to find in these boxed sauces, I definitely wanted to reproduce a healthy, easy, from scratch version. 

And after a few tweaks, I did come up with something that was husband approved, containing loads of flavour, while remaining healthy and paleo!

Healthy pasta sauce


Time


30-40 minutes (10 minutes prep)

Portions 


2-3 adult portions


Ingredients


  • 1 tablespoon extra virgin olive oil
  • 1/2 kilo (1 lbs) ground pork 
  • 1 onion (thinly sliced) 
  • 2-3 cloves of garlic
  • 2 stalks celery (finely chopped) 
  • 1 carrot (finely chopped) 
  • Salt and pepper to taste
  • 2-3 tablespoons almond flour
  • 6 chopped tomatoes 
  • 1/2 cup water
  • 1 tablespoon red wine vinegar
  • 1 teaspoon oregano
  • 2 sprigs of rosemary
  • 1 tablespoon paprika powder
  • 2 cups chestnut mushrooms
  • 100 grams of olives (sliced in rings) 
  • Optional: Small handful of fresh basil 

Instructions


  • Heat olive oil in pan with high sides
  • Brown meat 
  • Add onion (be sure to slice into small pieces) and garlic (use garlic press)
  • Once the onion is translucent, add the remaining vegetables (all cut into small pieces!) and salt and pepper
  • Once the vegetables have started to sweat a bit, add the rest of the ingredients except for the mushrooms, olives, and basil
  • Bring to a boil and simmer for 15 minutes or until the vegetables are soft enough for your preference

  • Add the mushrooms and olives, and cook for an additional 5 minutes
  • Serve on (zucchini) pasta with fresh basil leaves!
