Whole 30 Approved: Red peppers and pork

In the past few months, I have spent some time working on developing simpler recipes. Ones that really focus on one or two main ingredients, and then let the flavours there do their magic. In my quest to not stuff every single last vegetable in the fridge into one dish, I restrained myself and came up with this Red Peppers and Pork recipe (Whole 30 approved!)

It's pretty easy, but the flavours are amazing, just sayin'. And I don't even like bell peppers. The combination of pork and mushrooms just seems to make everything blend together perfectly, while the bell peppers leave a subtle flavour. 

Even the Toddler liked it. As in actually consumed bell peppers! Yes, it happened, much to my surprise! Although, he's still not completely sold on them, everything else in this dish was Toddler approved! And when the Toddler approves, I know I have to share with you! 

With Whole 30 currently going on, this recipe makes a great dinner, lunch, or if you crack an egg in it, it makes a delicious, savory breakfast. So make a large batch, save the leftovers, and enjoy!

Time


40-45 minutes (30 minutes cooking, 10-15 minutes prep)


Portions 


2 adult portions

Ingredients


  • 1 tablespoon coconut oil
  • 1 large onion
  • 5 strips of pork shoulder (1 kilo or 2 lbs worth)
  • 5 red bell peppers cut in strips 
  • 2 cups white, button mushrooms
  • Salt and pepper to taste 
  • 2 cloves garlic
  • 1 tablespoon paprika powder 
  • 1/2 tablespoon dry mustard 
  • 1/2 cup water (or homemade broth or stock!

Instructions


  • Heat pan with coconut oil on medium heat
  • Add onion and pan fry, being sure to mix frequently
  • Once the onion is translucent, turn UP the heat and add the whole pieces of pork shoulder
  • Brown all sides of the pork until it is a lovely golden colour (on high heat, this may take about 5 minutes) 
  • Turn down the heat to medium and carefully add all of the remaining ingredients. When adding the water, be careful! If the heat is high, it may splatter so be sure to step a little farther away from the water or take the pot away from the stove top in order to do so.
  • Bring to a boil then simmer for 15-20 minutes
  • By this time, the stock should have reduced and the meat should be cooked. If you have thicker pieces of pork, add a little bit of water (1/8 cup) and cook for an additional 5-10 minutes.
