Whole 30 Meal Plan 3

So food? This week, I'm going for simple, quick or minimal prep type of meals. I'm definitely still working leftovers into my breakfasts and lunches, as well. 

Even though my grandparents are still here, I'm keeping our adventures in the kitchen on the simpler side. They're going back home this week (boo) so I don't actually want to spend all that much time cooking (gasp, yes, it's true). 

Some thoughts on being an expat: Moving country is very difficult. I haven't seem my family since our visit to the US when the Toddler was a little babe. I've gotten used to it, but seeing my grandparents here has actually reminded me that I am missing out on quite an important aspect of life - having your own family around. Luckily there's skype and the internet. I can't imagine what people did before skype.   

Moving on, here's what we'll be cooking this week:

A roulade with root vegetable mash loaded with kale
Grandma's meatballs 
Chicken stew 
Sausages with mushrooms (recipe coming soon) and a side of rosemary potatoes

Broccoli cauliflower soup
Sweet potato and leftover sausage skillet
Leftover roulade + egg + butternut squash and 'wild' spinach 
Leftover stew
Leftover meatballs + egg + veg (getting the pattern with my simplified breakfasts and lunches yet?)
